Preparation: Create a flavorful mixture by combining sliced onions, besan (gram flour), fresh cilantro, green chilies, ginger, and spices including turmeric, salt, cumin, asafoetida (hing), and carom seeds (ajwain). Mix with a bit of water, ensuring the onions become soft enough to stick to the bread.
Assembling: Spread the prepared onion-besan mixture onto slices of bread, covering them thoroughly so they are well-coated for a crispy texture.
Frying: Deep-fry the pakodas in mustard oil over high flame. Frying at a high temperature ensures the exterior is extra crispy and prevents the bread from absorbing excess oil.
Serving: Serve these hot, crispy pakodas with tomato ketchup or your favorite green chutney for a perfect evening snack.
