Take a large mixing bowl. Add 2 cups of finely chopped Onions.
Add 1 cup of finely chopped Potatoes.
Add ¼ cup of finely chopped Green Coriander leaves and 2-3 finely chopped green chillies.
Add ½ tsp cumin seeds, salt to taste, ½ tsp Kashmiri Red chilli powder, and ½ tsp Haldi Powder.
Now, add 1.5 cups of besan and mix everything well.
We do not need to add water to the mixture, as while mixing, the vegetables will already release water, which will help with the binding. Take a tablespoon of the mixture and give it a Pakora-like shape.
Heat oil in a Kadai. I usually prefer Mustard oil for frying. You can use any as per your preference. When the oil gets hot, add the Pakora and fry it on medium to high flame.
Flip to the other side once one side gets fried.
Fry all the Pakoras in the same manner until they get crispy and golden brown. Take them out of the oil using a strainer and place them on tissue paper.
Sprinkle some chaat masala on the Pakoras.
Serve with a hot cup of tea and spicy Green Chutney.
