Aloo Samosa or Aalu Samosa recipe

Samosa is a very famous street food in India and is available at every corner. It is loved by everyone and is one of the favorite snacks in India.

Ingredients
  

For Dough

  • 1.5 cup Refined wheat flour
  • 1/2 tsp salt
  • 1/2 tsp carom seeds
  • 8 tsp desi ghee
  • water as required

For Stuffing

  • 3 tbsp oil
  • 1 tsp fennel seeds
  • 1 tsp cumin
  • 2 inch grated ginger
  • 2-3 green chilli
  • 1/2 cup frozen peas
  • 1 tbsp gram flour
  • 1 tsp amchur powder
  • 1 tsp garam masala
  • 1 tsp cumin powder
  • 2 tsp red chilli powder
  • salt to taste
  • 1/2 tsp turmeric powder
  • 1 tsp coriander powder
  • 1/4 cup chopped coriander leaves

For Frying

  • Oil

Instructions
 

To make Dough

  • Mix refined wheat flour, salt and carom seeds together in a mixing bowl.
  • Add desi ghee. Mix well and check if the mixture is ready.
  • Gradually add water to prepare a slightly hard dough. Cover and let it rest for 20 minutes.

To make Stuffing

  • Heat oil in a kadai/wok
  • Add fennel seeds, cumin and let them fry for few seconds.
  • Add grated ginger and green chilli. Fry them.
  • Add frozen peas and cook it for few seconds.
  • Add gram flour and cook for few minutes on low flame.
  • Add amchur powder, garam masala, cumin powder, red chilli powder, salt to taste, turmeric powder, coriander powder and mix well. Cook for half minute.
  • Add boiled and mashed potatoes. Mix well.
  • Add chopped coriander leaves. Mix well
  • Stuffing is ready. keep it aside to let it cool.

To make Samosa

  • Knead the dough for 3-4 minutes.
  • Prepare small balls from dough to make samosas.
  • Roll into oval shape about 8 inches long and 6 inches wide.
  • Cut from the middle to divide it into two equal parts.
  • Apply water on the edges.
  • Join the edges together to make a cone like shape.
  • Fill samosa masala in the cone. Apply water on the edges to seal it. Make a pleat.
  • The samosas are ready to fry now.
  • Heat oil in a kadai or pan to fry the samosas on low flame.
  • Put samosas one at a time in the pan when you see light bubbles.
  • Keep stirring occasionally and fry them.
  • Samosas will take time to fry. Keep flipping and stirring. Be patient and fry until they turn golden brown.
  • Serve the samosa with green chutney or tomato sauce. Enjoy!
