Appe Recipe | Instant Suji Appe

Ingredients
  

Appe Batter

  • * ½ cup Suji
  • * ¾ curd
  • * Water as Required
  • * 2 tbsp frozen corn
  • * 1 finely chopped tomato
  • * 1 finely chopped green capsicum
  • * 1 finely chopped onion
  • * 2 tbsp chopped coriander leaves

For Tempering Batter

  • * 1 tbsp oil
  • * ½ tsp mustard seeds
  • * 3-4 crushed curry leaves
  • For Chutney
  • * ½ cup of peanuts
  • * 2 green chilli cut in half
  • * 1 tbsp dry coconut pieces
  • * coriander leaves
  • * 5 garlic cloves
  • * 1 tsp salt
  • * half lemon juice
  • * water

For Tempering Chutney

  • * 1 tbsp Ghee
  • * ½ tsp Mustard seeds
  • * 3-4 crushed curry leaves
  • For Cooking Appe
  • * Desi Ghee

Instructions
 

  • To make Appe batter, take a mixing bowl. Add ½ cup Suji and ¾ cup curd. Start mixing.
  • Add a little bit of water and mix well. The consistency of the batter should be thick, so do not add a lot of water at once. Also, keep in mind that Suji absorbs water.
  • For veggies, we will add 2 tbsp frozen corn, 1 finely chopped tomato,1 finely chopped green capsicum,1 finely chopped onion, and 2 tbsp chopped coriander leaves to the batter.
  • Mix well to make a thick batter. As you can see, the batter is thick. Cover with a lid and keep it aside till the Sooji gets thicker. In the meantime, we will prepare the Tadka and Chutney that will enhance the taste of the Appe.
  • First, let’s prepare the temper. Heat 1 tbsp oil in a Tempering pan on a medium flame. I always use Mustard oil for cooking.
  • As soon as the oil is heated, add ½ tsp mustard seeds and 3-4 crushed curry leaves.
  • Add the Tadka to the batter. Mix well. Cover with a lid and keep it aside for 15 minutes.
  • Now, let’s make the chutney. Take ½ cup of peanuts and dry roast them. Keep it aside.
  • Prepare a different Tadka for chutney. Heat 1 tbsp Ghee in the same Tempering Pan. As soon as the oil is heated, add ½ tsp Mustard seeds and 3-4 crushed curry leaves. When the tempering is ready, turn off the flame.
  • Add the roasted peanuts to a grinding jar. Add 2 green chilli(cut in half), 1 tbsp dry coconut pieces, coriander leaves, 5 garlic cloves, 1 tsp salt, half lemon juice, and some water.
  • Grind to make the sauce. Take it out in a bowl and add the tempering. The chutney is ready. Keep it aside. You can refrigerate and store it for a week in an airtight container, and also use it with other South Indian dishes.
  • Let’s proceed to cook the Appam now. Take the Appe Pan.
  • Grease the Appe Pan with desi ghee.
  • Place a tbsp of batter in each space. Cover with a lid. Let it cook for 4-5 minutes.
  • After 5 minutes, remove the lid, apply desi ghee on the upper side, and flip the Appe to cook the other side by covering with the lid and cooking for 2 minutes.
  • After 2 minutes, remove the lid. You can just cook the Appam in the same manner until they become crispy.
  • The crispy and healthy Appe is ready now. You can now serve it with the chutney.
