To make Baby Corn fry, first, we need baby corn. You can easily get them from the market near you. Here, I've taken 250 g of baby corn.
We will wash it first, so take water in a large bowl, and clean the baby corn in it to wash off any dirt and impurities.
Place the baby corn on a board, and chop it into small or medium-sized pieces as per your preference.
Take 1 liter of water in a saucepan, add 1 tsp of salt, and add the chopped pieces. Let it come to a boil on medium flame.
As soon as it comes to a boil, let it boil on low to medium flame for 6-7 minutes to cook it 70%.
Now, filter out the extra water.
Put a pan on the gas on medium flame, and when it gets hot, pour 1 tbsp of olive oil, and add the chopped pieces. Stir and add a pinch of salt and 1 tsp Turmeric powder. Mix well, and cook on low to medium flame for 5 minutes.
After 5 minutes, add the following finely chopped veggies: onion, capsicum, tomato, and green chilli, and keep aside the coriander leaves for now, as we will add them later. Stir, and cook on medium flame for 2 minutes. You can also add other veggies such as Broccoli, Corn, etc.
After cooking the veggies for 2 minutes, add 1 tsp Oregano, 1/4 tsp Black pepper powder, 1/2 tsp Chaat Masala, 1 tsp Soya Sauce, and 1 tsp Tomato Ketchup. You can also add 1.5 tsp of Garlic powder if you have it or prefer to.
Mix everything well, and cook on low to medium flame for 3-4 minutes. Add the chopped coriander leaves now. Mix well and cook for 1-2 minutes now.
Our healthy and spicy Baby corn stir fry is ready now.
Garnish with coriander leaves/spring onion.
Serve hot as a snack or as a side dish with Rice. Enjoy!
