To make Cajun Potatoes, we will take 300 g of Baby Potatoes. Wash them properly to remove any dirt.
Take a saucepan on medium to high heat, add water, and put all the potatoes into it. Add a tsp of salt and boil it to cook it 90%. Alternatively, you can also cook it in a pressure cooker.
After boiling it, we can check if the potatoes have cooked well using a fork. Turn off the gas, and strain the water.
Strain the water, and keep the potatoes in a separate mesh. Keep aside and proceed to make the sauce.
To make the Cajun Sauce, take a blending or sauce jar, add 1 quarter cup of Mayonnaise, 2 tbsp of tomato ketchup, 1 tbsp of Kashmiri Red Chilli Powder, and 5 Cashews. Blend it. If you are mixing in a bowl, then use cashew powder.
Blend to a creamy texture. The color will also come out so good.
Now, add 1 tsp Pizza Seasoning, 1 tsp Red Chilli Flakes, 2 tsp Garlic powder, 1 tsp Onion powder, and 1 quarter tsp black pepper powder. Add salt to taste. Keep in mind that all the spices and sauces we added have salt, so add salt in moderation.
Add 1/2 cup of boiled milk. Blend to mix everything together and make a slightly thick sauce.
The consistency of the sauce should be neither too thick nor too thin. You need a slightly thick sauce, so add the milk accordingly. Keep the Cajun potato sauce aside.
In the meantime, the boiled potatoes have also cooled down. Take the potatoes and press them gently with your palms to flatten them. Alternatively, use a potato masher.
Flatten all the potatoes in the same manner, and keep them aside.
Now, we will prepare a slurry. Take a large bowl, add 4 tbsp of corn flour, 2 tbsp of refined flour, and salt to taste. Add some water and mix to prepare a slightly thin slurry.
Now, dip the flattened potatoes in the slurry. Also, take a kadai and heat oil on a high flame for frying the potatoes.
Now, just fry the potatoes that are dipped in the slurry. We have to fry on a high flame.
We have to fry the potatoes until they become crispy on both sides. So use a fork to turn them over and fry both sides evenly.
Once they are fried well and get crisp, we need to take them out on a mesh.
Put them on a plate and pour the Cajun Sauce on the potatoes.
Garnish with chopped onion, coriander leaves, and red chilli powder.
