Take ½ cup maida(all-purpose flour and ¼ cup corn flour in a mixing bowl)
Add the spices: 1 tsp red chilli powder, ½ tsp black pepper powder, 2 tsp ginger garlic & green chilli paste, and salt as per taste.
Add water gradually as required, mix well using a hand whisker and prepare a smooth batter.
Take a cauliflower. Chop it into small pieces or florets. Wash it properly.
Add the chopped gobi florets into the batter and coat it well with the batter.
Heat oil in a kadhai/pan and once it is heated, add the coated gobi pieces to the oil. Fry on medium to high flame.
Fry the gobi pieces until they turn golden brown in color. Make sure to flip and fry both sides.
Fry all the gobi pieces in the same manner.
Heat 3 tbsp oil in a kadhai/pan. Chop the following veggies: 12-14 chopped garlic cloves, 2-inch chopped ginger, 1 finely chopped onion, 1 onion petal, 1 chopped capsicum, and 3 chopped green chilli.
Once the oil is heated, add the chopped ginger, garlic, green chilli, and finely chopped onion. Cook on high flame. Stir continuously.
Once the onion gets soft, add the chopped capsicum and onion petals. Stir and Cook on high flame.
After cooking for a minute, we will add salt as per taste, ½ tsp red chilli powder, ½ tsp black pepper powder, 1 tbsp red chilli sauce, 1 tbsp soya sauce, 1 tsp tomato ketchup, and chopped spring onion. Mix well and cook on low flame. Turn the flame to low before adding the sauces.
After cooking for a minute, add the cornflour slurry. (To make cornflour slurry, add 1 tbsp cornflour with 4 tbsp water and make a lump-free mixture)
Mix well and cook on low flame. Stir often.
Add ½ cup water.
Mix well and turn the flame to high. Let it cook and stir often. After a boil, it will thicken.
After a boil, turn the flame to low and cook for 4-5 minutes.
After 5 minutes, add the fried gobi pieces and chopped spring onion. Mix well. Turn off the flame.
Serve it hot. Enjoy the delicious and spicy Chilli Gobi.
