To make Chilli Potato at home, first we need 4 medium-sized Potatoes or as per the quantity of chilli potatoes you are planning to make. Peel the outer layer after washing it thoroughly to get rid of any impurities.
Now, cut it into large pieces, and then chop into medium-sized pieces just like French fries. Do not cut too thin or too thick.
Now, put the chopped potatoes immediately into water, or they will turn brown or black. We will wash them 3-4 times with cold water.
You can see that after washing the potatoes, the water would be really clean, and this shows that there is no excess starch in the potatoes, which would result in crispier Chilli potatoes later when we cook them.
Take 1 liter of water in a pot on medium flame. As soon as the water becomes hot, we will put 1 tsp of salt and all the chopped potato pieces.
We do not have to overcook the potatoes to avoid breaking. When it comes to a boil, turn off the gas, and we will take out the potatoes and strain them immediately.
After we strain them, we will wash them with normal cold water once. Break a potato to check the consistency, as they are not too soft.
Take a large bowl, take 1/4 tsp of all-purpose flour, 1/4 cup Rice Flour, 1 tsp Red Chilli Powder, and salt to taste. Mix well using a spoon.
After mixing, add the potato pieces. Coat them with the mixture.
Take out the coated potatoes on a mesh to strain the extra mixture.
Now, add the water to the remaining mixture and make a thick batter.
Coat the potatoes in the batter. This double coating of potatoes ensures that they will come out extra crispy.
Now, let’s move to frying the potatoes. Take oil in a Kadai. Once the oil gets heated, put the potatoes into it one by one and fry on medium to high flame.
After frying, when they get a golden color, take them out and place them on a strainer.
Prepare and chop the following veggies: 2 tbsp chopped garlic, 1 medium-sized chopped onion, 3 Green chilli, 1/2 chopped capsicum, and chopped coriander leaves.
Heat 2 tbsp oil in the same Kadai. As soon as it gets hot, first add the chopped garlic, and sauté it. Add 1 tsp of white sesame seeds. Mix well with the garlic.
Add the chopped onion and roast it. As soon as they get fried, add the chopped green chilli, and chopped capsicum. Stir and cook them a little. We do not want to overcook them.
As soon as the vegetables get cooked a little, turn the flame to low, and add 1 tbsp Red chilli sauce, 1 tbsp soya sauce, 1 tbsp tomato ketchup, 1/4 tsp black pepper powder, and salt to taste. Stir and mix, fry on a low flame.
In the meantime, add 1 tbsp of corn flour with 3 tbsp of water and mix to make a corn flour slurry. Keep it aside.
As soon as the vegetables get cooked a little, we will add 1/4 cup of water, and turn the flame to medium. Let it come to a boil.
When it comes to a boil, we will add the corn flour slurry to it.
When you add the slurry, the mixture will start to thicken. Let it cook for 2-3 minutes on medium flame.
Now, add the fried potato pieces, and turn off the gas flame.
Mix the potatoes with the mixture, and add the chopped coriander leaves. Mix well.
Garnish with chopped coriander leaves and white sesame seeds.
Our crispy and spicy Chilli potatoes are ready now.
