Take a Kadai/Pan. Add 2 tbsp ghee and let it melt on low flame.
As the ghee melts, add 1 cup of Almonds to the Kadai. Stir continuously and roast the almonds on medium flame. We need to roast them until cracks appear on the almonds.
Next, add 1 cup of cashews. Roast them with almonds. Remember that cashews take much less time to roast so stir continuously. Take them out in a separate bowl.
Now, add ½ cup of Walnuts and roast it on low flame. After 1 minute, add ¼ cup of Pista and roast it. Take them out in the bowl.
Next, add 3 tbsp melon seeds, 2 tbsp Sunflower seeds, and 3 tbsp Pumpkin seeds. Roast them on low flame for half a minute.
After half a minute, add ¼ cup of grated coconut, and 2 tbsp Desi Ghee and mix well. Add 1 cup of Raisins, mix well, and roast for half a minute.
Add 2 tbsp Poppy seeds. Mix well and roast for half a minute on low flame. Take them out in the bowl. Keep the bowl aside for now.
Now, add 3 cups of Makhana and dry roast it on medium flame until it becomes crisp. Take them out in a separate bowl.
Add 1 tbsp ghee in the Kadai, 1.5 cups of brown sugar, and ¾ cup of water. Stir continuously and let it cook on medium flame.
In the meantime, add all the roasted dry fruits in a grinder and grind them to a fine powder-like consistency. First, grind the Makhana and then the other dry fruits. You may need to repeat the process 2-3 times. Please keep them in a bowl and add 1 tsp of cardamom powder. Mix it well.
Check the consistency of the sugar syrup. If a string forms between your fingers then it's ready. Mix the dry fruit powder with the syrup.
Now, we must prepare the Ladoo while the mixture is hot. Grease your hands with ghee and take a big spoon of mixture in your hands. Roll them and press gently to make a lemon-sized Ladoo.
Prepare the other Ladoos in the same manner.
