The Dry Mix Veg recipe is made using alot of vegetables such as cauliflower, peas, that are cooked together with spices and herbs to make a mixed vegetable sabzi that is not only very delicious but also very healthy.

Ingredients
  

  • ½ cup chopped cabbage
  • 1 cup chopped cauliflower
  • 1 chopped capsicum
  • 7-8 chopped beans
  • 1 chopped carrot
  • 1 chopped potato
  • 1 chopped onion
  • ½ cup frozen peas
  • ¼ cup chopped coriander
  • 3 chopped green chilli
  • 4-5 chopped garlic cloves
  • 3-4 tbsp oil
  • 1 tsp cumin
  • ½ tsp mustard seeds
  • ¼ tsp hing
  • ½ tsp turmeric powder
  • Salt as per taste
  • 1 tsp coriander powder
  • 1 tsp red chilli powder
  • 1 tsp Amchur powder
  • ½ tsp garam masala
  • 1 tsp kasuri methi
  • Chopped coriander leaves

Instructions
 

  • To make dry mixed veg, we need first to prepare the vegetables. Take ½ cup chopped cabbage, 1 cup chopped cauliflower, 1 chopped capsicum, 7-8 chopped beans, 1 chopped carrot, 1 chopped potato, 1 chopped onion, ½ cup frozen peas, ¼ cup chopped coriander, 3 chopped green chilli and 4-5 chopped garlic cloves. Keep them aside for now.
  • Take a kadhai/pan and add 3-4 tbsp oil. As soon as the oil is heated, add 1 tsp cumin and let it fry for a few seconds. Next, add ½ tsp mustard seeds and ¼ tsp hing.
  • Add green chilli and garlic and cook for half a minute.
  • After half a minute, add the onions and cook them for 2 minutes until they turn golden brown in color. After cooking the onions, add the chopped potatoes, carrots, and beans. If you are not going to boil the cauliflower, you can add it now. Also, if you are using fresh peas, you can add them now. Cook for 1 minute. After 1 minute, Cover the lid and cook the veggies for 2 minutes on high flame.
  • Add cauliflower, cabbage, capsicum, and frozen peas. Mix well.
  • Add ½ tsp turmeric powder and cook for 2 minutes. Add salt as per taste and mix well.
  • After adding the salt, we will cover it and cook for 4 minutes on low flame. We will remove the lid and mix it 2-3 times in between.
  • Add the following spices: 1 tsp coriander powder, 1 tsp red chilli powder, 1 tsp Amchur powder, ½ tsp garam masala, and 1 tsp Kasuri Methi. Mix well
  • Cover the lid and cook for 2-3 minutes on low flame. Add the chopped coriander leaves and mix well.
  • Mix veg is ready. Serve it with roti, rice, and salad. Enjoy
