Take 1 fresh Coconut, peel the outer brown layer, and chop it into small pieces.
Add all the chopped pieces to a grinding jar and grind it on pulse mode. We have to keep the consistency slightly coarse and not fine.
Check the consistency below. The texture is not paste-like and looks the same as the desiccated coconut.
Now, take a pan, add 2 tbsp of desi ghee, and add the coconut powder. Cook for 2 minutes on low flame.
After cooking for 2 minutes, add 1 cup of milk. Use full-fat milk. Cook on low to medium flame until the Coconut absorbs the milk and gets dried.
Now, add ¾ cup of sugar and mix it well. Cook on low to medium flame and add ½ tsp cardamom powder when it gets dried.
Cook until we get the desired consistency as shown below. The coconut will start leaving the Kadai. Leave it aside for 20 minutes to let the mixture cool off.
After 20 minutes, the mixture will get more dried. Now, let’s proceed to make the Laddus.
Apply desi ghee to your hands, take a spoonful of coconut mixture, and give them the shape of a Laddu.
Prepare the other Laddus in the same manner.
Garnish with chopped Pistachios, rose petals, and silver Vark.
The tasty and delicious Coconut Laddu is ready. Serve it to your friends and family this Diwali and make your celebration special. Happy Diwali!
