Gobi Paratha or Gobhi ka Paratha is a very popular North Indian Paratha that is made with stuffed Cauliflower filling.

For Stuffing
- 1 grated cauliflower
- 2-3 tbsp oil
- 1 tsp cumin
- 1/2 tsp carrom seeds
- 1 tbsp grated ginger
- 2 chopped green chilli
- salt to taste
- 1/4 tsp turmeric powder
- 1 tsp coriander powder
- 1/2 tsp red chilli powder
- chopped coriander leaves
For Dough
- 3 cup wheat flour
- 1/2 tsp salt
- 5-6 tsp desi ghee
- water as required
For Stuffing
Wash a cauliflower properly and then grate it.
Heat oil in a kadhai/wok.
Once oil is heated, add cumin, carrom seeds and fry them.
Add ginger and fry it. Next add green chillli.
Add grated cauliflower. Add salt as per taste, turmeric powder, coriander powder, red chilli powder. Mix well
Add chopped coriander leaves and mix well. The stuffing is ready.
For Dough
Take 3 cups of wheat flour, salt and desi ghee in a mixing bowl. Mix well.
Gradually add water to make a soft dough. Grease your hands with oil and knead well for 5-7 minutes. Leave it aside for 15-20 minutes.
Divide the dough into equal-sized balls. Take one dough ball and roll it into a small circle with rolling pin and board.
Place a spoonful of the cauliflower stuffing in the center of the rolled-out dough circle. Bring the edges of the dough together to cover the stuffing completely.
Flatten the stuffed dough ball slightly and dust it with some flour on both sides.. Roll it out gently into a thick circle to make paratha.
To Cook Paratha
Heat a tawa/pan on medium flame.
Place the paratha on the tawa and cook until it turns golden brown on bottom side.
Flip the paratha. Apply desi ghee on the cooked side and then flip it again and spread desi ghee on the other side as well.
Cook the paratha until golden brown spots appear on both sides.
Do the same with the rest parathas.
Serve with yogurt, pickle and chutney. Enjoy your delicious Gobi ka paratha!
