Take a large mixing bowl. Place a strainer over it.
Now, place a Muslin cloth over the strainer and Pour 800 gm of Fresh Curd.
Fold the fabric from both ends together.
Now, bring the cloth from the edges together. Press and squeeze out the excess water.
After squeezing out the moisture, Cover and keep the mixture on the strainer.
Place a heavy object to press it and squeeze out any remaining moisture.
Refrigerate it overnight.
After keeping overnight, the mixture will get a Paneer-like texture. Don’t throw away the water as you can use it to make dough for different dishes such as Butter Roti, and Naan.
The Hung Curd or Greek Yogurt is ready now. You can whisk it give it a paste-like consistency and use it to make various dishes such as Shrikhand.
