Kaju Katli Recipe

Kaju Katli or Indian cashew fudge is a delicious and premium Indian Sweet. It is made with cashews, sugar, water and ghee and has a very rich and melt in mouth texture that leaves you wanting for more. Make this delicious sweet at home to celebrate any special occassion and festivals.

Ingredients
  

  • 2 cup cashew
  • 1 cup sugar
  • 1/2 cup water
  • 1 tbsp desi ghee

Instructions
 

  • To make Kaju katli, take 2 cups of cashew nuts.
  • Take a grinding jar and all the cashew nuts into it.
  • Grind to make a fine powder. We need to grind it slowly and in batches otherwise, cashew nut will leave oil and the powder will turn out to be sticky.
  • Now, we will pour the powder through a sieve to remove any bigger parts left after grinding.
  • Our fine cashew powder is ready. Keep it aside for now.
  • Take a pan and add 1 cup sugar and 1/2 cup water. Cook on medium to high flame and let the sugar melt.
  • Cook it until you can see that the sugar syrup gets sticky.
  • Add the cashew powder to the syrup. Turn the flame to low and mix it well.
  • Mix well and cook for 7 minutes on low flame to medium flame.
  • After 7 minutes, add 1 tbsp desi ghee to the mixture, and cook for 2-3 minutes on low flame.
  • We get the desired consistency when a single thread forms between two fingers. Turn off the flame.
  • Take a butter paper. Apply some desi ghee to it.
  • Pour the kaju mixture on the butter paper.
  • Keep folding the paper from the sides to keep the kaju mixture in between. The kaju mixture will cool and get thickened and form a dough-like shape.
  • The mixture will thicken. Take the dough in your hands.
  • Place a plate inverted. Place a greased butter paper on it. Place the dough on it and slightly flatten it with your hands.
  • Place another greased butter paper above the dough.
  • Now, roll the dough to flatten and spread it into a thin sheet. Don't make it too thin.
  • Remove the butter paper. The thickness of the kaju katli should be 1/3rd of an inch to 1/4th of an inch.
  • Apply silver Vark or edible silver foil to make it tempting and attractive. Leave it for 30 minutes.
  • Cut it into a diamond shape. The perfect kaju katli is ready to serve.
  • We will garnish the kaju katli with rose petals and cashews to serve them during festivals and family gatherings. Enjoy the perfectly delicious and soft kaju katli.
