Boil 2 cups of water in a saucepan on high flame
Once the water is boiled, add 6-7 dry red chilli, 4 Kashmiri red chilli and 2 tomatoes.
Cook on medium flame for 8-9 minutes. Stir often in between.
After 8-9 minutes, turn off the gas, let it cool and remove the tomato peels.
Take a grinding jar and add them to the jar. Grind until you get a fine paste like consistency.
Heat 2 tbsp oil in a separate pan on medium flame.
Once the oil is heated, add 2 tbsp finely chopped ginger and 2 tbsp finely chopped garlic and fry them for 30 seconds.
After 30 seconds, add 1 tbsp soya sauce. Mix and stir on low flame for few seconds.
Add the tomato chilli paste. Mix it well and let it cook on medium flame.
Add 1 tsp vinegar, 1 tsp powdered sugar and salt to taste
Keep stirring in between and let it cook for 6-7 minutes on medium flame.
After 6-7 minutes, turn off the flame and let it cool.
Transfer to a bowl and serve with Momos.
