To make Moong Dal Halwa at home, first take 1 cup of Moong Dal. This is the same dal used to make Khichdi.
Now, pour water in the bowl and wash the Dal properly 3-4 times.
Now, soak the Dal in water and cover the bowl with a lid. Keep it aside for 4 hours
After 4 hours, check the Dal. You can see that the Dal has almost doubled in quantity as it has swelled after soaking.
Place a fine sieve over a bowl. Pour the dal over and sieve it properly to remove any excess moisture.
Now, add the Dal to a grinder and grind it without adding any water. In between, you can mix with a spoon and grind again till you get the thick paste-like texture as shown below.
Now, let’s make the Halwa, take a Kadai or a Pan, and pour 1/2 cup of Desi Ghee. Don’t turn on the flame yet.
Now, add the Mung Dal Paste to the Kadai, and turn on the flame.
Now, mix and stir the mixture and roast on a low flame. Roasting the Halwa takes more than 30 minutes, so be prepared.
In the meantime, take milk in a small bowl, and mix a few saffron strands into the milk. Keep it aside so that while we roast the Halwa, it also leaves the flavor.
Now, you can see that, after mixing and roasting for a few minutes, the mixture has spread well and there are no large lumps. However, if lumps occur, you can turn off the flame and grind the mixture.
Here, roasting for a few more minutes, the mixture has become fine and granular in texture, and the color has changed to light brown.
Now, add 1 tbsp chopped cashews and almonds, and also some kishmish. Mix with the mixture and roast them with it.
As you can see below, Dal and nuts have roasted well; you need to roast them till they get the color as shown below. You will also get to know how long to roast, as it releases a really nice aroma.
Now, turn off the flame, mix for a minute, and then add 1/2 liter of Full-fat Milk.
After adding the milk, turn on the flame, and add a tsp of Green cardamom powder.
Next, add the saffron milk that we kept aside.
Now, stir and mix well, and roast the mixture on low to medium heat till the mixture absorbs the milk.
As the mixture thickens, add 1 cup of Sugar. Stir and mix well. After adding the Sugar, the mixture will become slightly thinner again. We need to stir continuously now.
As we stir continuously, the mixture will thicken.
We need to stir and roast the Halwa until the Halwa gets the perfect thick consistency, and starts leaving the Pan.
Next, add 1 tbsp of Desi Ghee. Mix well.
The Moong Dal ka Halwa is ready now.
We will garnish it with Ghee, chopped nuts & dry fruits, and silver vark.
Enjoy the delicious Halwa.
