We will take 1 cup of whole Green mung beans to make Green Mung Sprouts.
Now, pour in a bowl, cover, and soak the Mung beans in water overnight or for 7-8 hours.
After keeping them overnight, you can see that the beans have swelled and almost doubled.
Wash the beans properly. Now, place a strainer over a large bowl and pour the beans onto the strainer to strain the moisture.
Wash once more with fresh water.
Discard the water. Leave the beans on the strainer and cover with a lid. Keep it covered for 24 hours. If you do not want to keep it in the strainer, you can keep it covered with a cloth, too. Remember to maintain the moisture, you have to sprinkle water every 6-7 hours or when you feel that the beans have dried. This is very important. If you have covered it with a cloth, then sprinkle water over the cloth to keep it moist.
With this easy method, the beans will sprout and you can use them to make other recipes such as Pesarattu, and Green Gram Dosa.
