Take 2 cups of Wheat Flour in a large bowl. Add 2 tbsp Gram flour, 1 tsp cumin, ¼ tsp carom seeds, 1 tsp Red Chilli flakes, and salt as per taste.
Add 3-4 tbsp chopped coriander leaves and 1 tbsp crushed ginger, garlic & green Chilli.
Pour 3 tbsp Desi Ghee and mix everything very well using your hands.
Add 1.5 cup of Chopped Spinach. Mix it well with the Flour.
Now, start adding water gradually to make a tight dough. We don’t want to make a soft dough as the veggies will leave the water when we will put the dough to rest.
The dough is ready. Knead it well for 2 minutes and then cover the lid and keep it aside for 20 minutes.
After 20 minutes, we will check the dough and knead it for a minute. The dough is ready to make the Spinach Paratha now.
Now, we will make balls out of the dough to roll and make the Palak Paratha. The ball should be slightly bigger than we make for normal Roti.
Coat the ball in dry Wheat flour and Roll it to the size of Roti using a Rolling board and Pin. If it feels sticky, apply more wheat flour.
Apply 2-3 drops of Desi Ghee and fold it from the edges to make a square-shaped Paratha.
Flip it to the other side. Dust with wheat flour and Roll it in a square shape.
Heat a Pan on medium flame. Put the Paratha on the Pan.
Once a side gets slightly cooked, we will flip it. Apply Desi ghee on both sides.
Keep flipping to cook both sides evenly. Cook on medium to high flame until the Palak Paratha becomes crispy.
