Take 1.5 cups of wheat flour in a mixing bowl. Add ½ tsp salt and 3 tbsp desi ghee.
Mix everything well, gradually add water, and knead the flour with your hands to make a soft dough.
After making the dough, cover it with a plate and keep it aside for 20 minutes.
Chop and prepare the following veggies: 3 finely chopped onions, ¼ cup coriander leaves, 2 green chilli, 1 tsp cumin, 1 tsp red chilli powder, ½ tsp garam masala, ½ tsp Amchur powder, ½ tsp coriander powder, 1 tsp Kasuri Methi, and salt to taste.
Add all the chopped veggies and spices into a mixing bowl. Mix well.
The Chatpata masala mixture for the Paratha is ready now.
Make small Rolls out of dough to make Paratha.
Dust with wheat flour and make a hollow space to fill the mixture.
Take a spoonful of mixture and fill in between. Seal the edges.
Roll with a rolling board and pin to make Paratha.
Cook on medium to high flame.
Flip it when one side gets roasted. Apply desi ghee and flip again.
Apply desi ghee on the other side too.
Roast and cook until both sides get crisp and cook well.
Serve with chutney, pickle, yogurt, and ketchup.
