Take 2.5 cups of Wheat Flour. Add 1 tsp salt. Mix well.
Add 2-3 tbsp desi Ghee. Mix well.
Gradually add water to make a soft dough. Cover it and let it rest for 15 minutes.
Now, take 1 cup of Sattu Powder. Keep it aside.
Also, prepare the following veggies: 1 chopped Onion, 1 inch Chopped Ginger, 6-7 chopped Garlic, 3-4 chopped green chilli, ¼ cup Coriander Leaves, and ½ Lemon Juice.
Add all the chopped veggies to the Sattu Bowl. Add the lemon juice.
Add salt to taste, ¼ tsp Kalonji, 1 tsp Cumin, ½ tsp Carom Seeds, 2 tbsp Mustard oil, 1 tbsp Pickle Masala.
Mix everything well. The filling is ready now.
Now, check the dough. Prepare small balls to make the Paratha now.
Give it a hollow space. Place 2 tbsp of filling inside. Seal the filling by pressing and bringing the edges together.
Dust some flour and roll to give it a Paratha shape.
Heat a Pan. Use a cast Iron Pan if you have that available. Once it is heated, put the Paratha on it to cook it.
Flip it and apply desi ghee once the bottom side gets cooked slightly. Flip to cook it.
Apply desi ghee on the other side too. Flip and cook both sides well.
Serve with curd and pickle. Enjoy!
