To make Suji Chilla, first take a large bowl and add 1 cup of Coarse Suji. You can use any Suji - fine or coarse.
Add 1/2 cup of Curd. Use fresh curd only.
Add 1/2 cup of water to the bowl.
Use a hand blender to blend everything very well.
Mix, cover with a lid, and keep it aside to rest for 10-15 minutes.
After 15 minutes, you can see how well the texture of Suji has come out.
Now, add 1 tsp of Jeera and salt to taste.
Now, add the chopped veggies. You can use any veggies as per your preference. Here, I’ve used finely chopped Coriander leaves, chopped tomatoes, chopped Onions, chopped Green capsicum, chopped green chilli, and grated Carrot.
Mix everything well. I added 1/4 cup more water. The mixture became very thick. Now, after mixing, the mixture is ready to make Chilla.
Now, let’s proceed to cook Chilla. Take a Non-stick Pan, or an Iron Pan, heat it and grease it with desi ghee, and pour 1 big tablespoon of batter.
Spread the batter evenly without making it either too thin or too thick.
Now, leave it and let it dry out from above. Now, pour some desi ghee on the sides too.
As it cooks and dries out, flip it to the other side. You can see, it has a really nice color. Press gently to roast the other side as well.
Flip to the other side again. You can see that it has cooked well.
The deliciously soft Suji Chilla is ready to serve now.
Cook the other Chilla in the same manner too.
Serve with Green Chutney and Tomato Ketchup. Enjoy!
