Egg Bhurji Recipe

This Indian Style Egg Bhurji or Scrambled Eggs Recipe is a perfect protein rich dih that can be prepared in just 10 minutes and goes well with Roti, Bread, and Pav.

Ingredients
  

  • 5 Eggs
  • 1/4 tsp salt
  • 1/4 tsp turmeric powder
  • 1 tsp cumin
  • 2 onions
  • 1 tbsp ginger garlic
  • 2 green chilli
  • 1-2 tomatoes
  • 1/2 tsp Garam Masala
  • 1 tsp Coriander powder
  • 1/2 tsp red chilli powder
  • Coriander leaves

Instructions
 

  • Take a mixing bowl. Break 5 eggs into it.
  • Add 1 tsp salt, and ¼ tsp turmeric powder and mix it well. Keep it aside
  • Heat oil in a kadai. Add 1 tsp Cumin, and 2  chopped onions, and cook on high flame for 4-5 minutes.
  • As soon as the onion changes its color, add 1 tbsp grated ginger garlic and 2 chopped green chilli. Cook on high flame for 1 minute. You can also use ginger garlic paste if you like.
  • After 1 minute, add 1-2 chopped tomatoes and cook until they get soft.
  • Add ½ tsp Garam Masala, 1 tsp coriander powder, ½ tsp red chilli powder. Sit and mix well. Cook for 1 minute on low flame.
  • Add the egg mixture. Stir continuously to cook on medium to high flame.
  • Once it's mixed well absorbed with the spices, add chopped coriander leaves. Mix well.
  • The Egg bhurji is ready.
  • Serve with pav and roti. Enjoy.
