Take a mixing bowl. Break 5 eggs into it.
Add 1 tsp salt, and ¼ tsp turmeric powder and mix it well. Keep it aside
Heat oil in a kadai. Add 1 tsp Cumin, and 2 chopped onions, and cook on high flame for 4-5 minutes.
As soon as the onion changes its color, add 1 tbsp grated ginger garlic and 2 chopped green chilli. Cook on high flame for 1 minute. You can also use ginger garlic paste if you like.
After 1 minute, add 1-2 chopped tomatoes and cook until they get soft.
Add ½ tsp Garam Masala, 1 tsp coriander powder, ½ tsp red chilli powder. Sit and mix well. Cook for 1 minute on low flame.
Add the egg mixture. Stir continuously to cook on medium to high flame.
Once it's mixed well absorbed with the spices, add chopped coriander leaves. Mix well.
The Egg bhurji is ready.
Serve with pav and roti. Enjoy.
