To make Egg Fried Rice, take 4 eggs. Keep them aside.
Heat 2 tsp oil in a Kadai. As soon as the oil is heated, break the eggs.
Add ¼ tsp black pepper powder and ½ tsp salt.
Mix everything well. Cook on medium to high flame.
The simple Egg Bhurji is ready.
Keep it aside on a plate.
Chop the following veggies: 1 cup cabbage, 1 onion, 1 tbsp garlic, and 1 inch ginger.
Also, chop the other veggies like ½ capsicum, 1 carrot, 3 green chilli, and spring onion. Keep the chopped veggies aside.
Heat 2-3 tbsp oil in a kadai. Add the chopped ginger and garlic. Saute for 10 seconds.
Add the chopped cabbage, onion, capsicum, carrot, and green chilli. Stir and mix well. Cook on high flame for 1 minute.
After 1 minute, add the chopped spring onion.
Add salt to taste, and 1 tsp black pepper powder. Mix well and cook for 30 seconds.
Add 1.5 cups of Steamed Rice.
Add 1 tsp soy sauce and spring onion.
Mix well and add the Egg Bhurji. Cook on low to medium flame.
Add 1 tsp Schezwan Sauce. Mix well.
Garnish with spring onion and serve it hot.
