Egg Fried Rice - Indian Anda Fried Rice

Ingredients
  

  • 4 Eggs
  • 2 tsp oil to make Bhurji
  • 1/4 tsp black pepper powder
  • 1/2 tsp salt
  • 1 cup cabbage
  • 1 onion
  • 1 tbsp garlic
  • 1- inch ginger.
  • ½ capsicum
  • 1 carrot
  • 3 green chilli
  • spring onion
  • 2-3 tbsp oil
  • salt to taste
  • 1 tsp black pepper powder
  • 1.5 cups of Steamed Rice.
  • 1 tsp soy sauce
  • 1 tsp Schezwan Sauce

Instructions
 

  • To make Egg Fried Rice, take 4 eggs. Keep them aside.
  • Heat 2 tsp oil in a Kadai. As soon as the oil is heated, break the eggs.
  • Add ¼ tsp black pepper powder and ½ tsp salt.
  • Mix everything well. Cook on medium to high flame.
  • The simple Egg Bhurji is ready.
  • Keep it aside on a plate.
  • Chop the following veggies: 1 cup cabbage, 1 onion, 1 tbsp garlic, and 1 inch ginger.
  • Also, chop the other veggies like ½ capsicum, 1 carrot, 3 green chilli, and spring onion. Keep the chopped veggies aside.
  • Heat 2-3 tbsp oil in a kadai. Add the chopped ginger and garlic. Saute for 10 seconds.
  • Add the chopped cabbage, onion, capsicum, carrot, and green chilli. Stir and mix well. Cook on high flame for 1 minute.
  • After 1 minute, add the chopped spring onion.
  • Add salt to taste, and 1 tsp black pepper powder. Mix well and cook for 30 seconds.
  • Add 1.5 cups of Steamed Rice.
  • Add 1 tsp soy sauce and spring onion.
  • Mix well and add the Egg Bhurji. Cook on low to medium flame.
  • Add 1 tsp Schezwan Sauce. Mix well.
  • Garnish with spring onion and serve it hot.
