Soak the Mung Dal: Measure 200 g of dry Mung Dal and soak it in water overnight or for at least 4–5 hours (this yield will make two pizza bases).
Wash and Rinse: Rinse the soaked Dal thoroughly 2–3 times under running water and drain well.
Blend the Batter: Transfer the Dal into a grinding jar, add 100 g curd and a small splash of water, then blend into a smooth paste.
Season the Batter: Pour the paste into a large mixing bowl. Add salt to taste, 1 tsp chili flakes, and 2 tsp oregano, then stir well to combine.
Prep the Pan: Lightly heat a non-stick pan over medium heat and grease it with a little desi ghee.
Cook the Pizza Base: Pour half of the batter into the pan and spread it evenly into a round shape. Once the bottom sets slightly, flip the base, brush the top with ghee, and continue flipping until cooked through and crispy on both sides. Repeat for the second half of the batter.
Assemble the Pizza: Place a cooked base on a plate or board. Spread a layer of pizza sauce evenly across the top.
Add Cheese: Sprinkle 40–50 g of mozzarella cheese over the sauce.
Add Toppings: Arrange your choice of toppings—such as sliced onions, tomatoes, capsicum, corn, olives, and 70–80 g of low-fat paneer seasoned with pizza sauce.
Bake: Transfer the assembled pizza to an air fryer and bake for 6–7 minutes, or until the cheese is completely melted and bubbly.
Garnish and Serve: Top with extra chili flakes and oregano, slice, and serve hot.
