To make Kadai Paneer Masala, take a large Pan. Add the following spices to it: 1 tbsp coriander seeds, 1 tsp cumin, ¼ tsp Fennel seeds, 2 green cardamom, 1 black cardamom, ½ inch Cinnamon, 4 Cashews, and 2 whole Dry Kashmiri Red Chilli.
Stir well. Chop the Kashmiri Red chilli into two pieces. Dry roast on low flame for 2-3 minutes.
When the air fills with the aroma from the spices, turn off the flame.
Transfer the spices to a grinding jar.
Grind to make the Masala. It would be coarse in consistency.
