Wash a Pumpkin properly. The Pumpkin weighs 300 gm. Peel and chop it. Remove the seeds.
Heat 2 tbsp oil in a Kadai. I always use Mustard oil for cooking.
When the oil is heated, add 1 tsp Panchphoran for flavor, ½ tsp cumin, 2 chopped green chilli, and 1 inch chopped ginger. Stir and fry for 10 seconds.
Add the chopped Pumpkin to the Kadai. Mix and cook well on medium flame.
Add 1 tsp coriander powder, salt to taste, and ¼ tsp Turmeric powder. Stir and mix well.
Turn the flame to low. Cover the lid and cook for 2 minutes.
Check the Pumpkin to see if it is soft. It has almost cooked. Cover the lid again and cook for 30 seconds.
Mix well and add ½ tsp Amchur powder. Mix it well.
Add chopped coriander leaves and mix it well.
Cover the lid and cook for 1 minute. The Kaddu ki Sabji is ready now.
Serve it with Poori and Enjoy.
