To make the Veg Pickle, we will need the following veggies: 2 Radish(peeled & chopped), 2 Carrots (peeled & chopped), 3-inch ginger(chopped), and ¼ cup Garlic cloves.
Take a Kadai, add 1 tsp black mustard seeds, 1 tsp Yellow mustard seeds, 1 tsp cumin, 2 tsp coriander seeds, 1 tsp Fennel seeds, and ½ tsp Fenugreek seeds. Stir continuously and dry roast on low flame.
Once it gives a nice aroma, add the mixture to a grinder and grind it to make the Masala or Powder.
Heat 1 cup Mustard oil in a Kadai on high flame. We need to heat it until it gives off fumes. Now, let it cool down a bit.
Add 1 tsp black mustard seeds, 1 tsp Fennel seeds, ½ tsp Fenugreek seeds, ½ tsp Carom seeds, 2 tsp Kalonji, ¼ tsp Hing. Mix well and fry for a few seconds.
Add all the chopped vegetables to the Kadai. Mix it well. Stir and cook well for 2-3 minutes on low flame.
Add salt as per taste, 2 tbsp red chilli powder, 1 tsp Turmeric powder, 1 tbsp sugar powder, and the Masala Mixture. Mix well.
Stir and cook well for 2 minutes on low flame.
Turn off the flame. Let the Pickle cool down. Add ½ cup Vinegar. Mix well.
Transfer to a separate bowl and cover it. Leave it aside for 3-4 hours so the Veggies absorb the flavor and spices. After 3-4 hours, the veg pickle is ready to serve.
