To make Green Moong dal Dosa, or Pesarattu, take 1 cup of sprouted Mung Beans.
Add them in a grinding jar along with 2 green chillis and 1 inch peeled and chopped ginger.
Add 3 tbsp Rice flour and salt to taste.
Add 1 cup of water and grind to make a fine paste-like batter for Mung Dosa. Adjust the quantity of water to meet your requirements.
Transfer the batter to a large mixing bowl. Keep it aside.
Proceed to make the stuffing for the Dosa. Take 200 gm of grated Paneer.
Mix the following veggies with the Paneer: 2 tbsp finely chopped Green coriander leaves, 2-3 finely chopped Green Chili, and 1 medium-sized finely chopped Onion. Also, add 1 tsp Jeera and salt as per taste. Mix everything well. You can also add other veggies as per your preference and taste. The stuffing for making the Dosa is ready now.
Proceed to make the Dosa now. Heat a cast iron Pan to make the Dosa. Brush Desi Ghee.
Sprinkle water on it, and then wipe it with a cotton cloth immediately.
Pour a spoonful of batter on the Pan. Spread it evenly.
Brush Desi ghee on the Dosa as it turns slightly brown.
Pour a spoonful of stuffing on the Dosa. Sprinkle some chopped Tomatoes, Green capsicum, and corn. You can add other chopped veggies as per your choice.
The Dosa is cooked well and has a nice brown color. Take it out from the edges. Fold it.
Serve with Coconut & Peanut Chutney. Enjoy!
