Pyaz ki Kachori Recipe/ Onion Kachori Recipe

Pyaz ki kachori is also known as Jodhpur Kachori. It is a very popular street food item in India. It has onion based stuffing and it tastes delicious.

Ingredients
  

For Dough

  • 2.5 cup All purpose flour(Maida)
  • 1/2 tsp carom seeds
  • 1/2 tsp salt
  • 1/4 cup Oil

For Stuffing

  • 1 tbsp cumin
  • 1 tbsp fennel
  • 1 tbsp kasuri methi
  • 2 tbsp coriander leaves
  • 3 tbsp oil
  • 1/4 tsp Hing
  • 3 tbsp Gram Flour(Besan)
  • 4-5 chopped Garlic cloves
  • 3-4 chopped onion
  • 3-4 chopped green chilli
  • 1 tsp Amchur Powder
  • 1 tsp Red chilli Powder
  • 1/2 tsp black salt
  • 1 tsp garam masala
  • 1/4 tsp Turmeric powder
  • salt to taste
  • 3 Potatoes(Boiled and Grated/Mashed)
  • 1/2 tsp Sugar
  • 2 onion slices
  • Oil for frying

Instructions
 

For Onion Kachori Dough

  • Take 2.5 cups of all-purpose flour in a mixing bowl and add 1/2 tsp carom seeds and salt.
  • Add 1/4 cup refined oil. Mix it well
  • Add water as required to prepare a soft dough.
  • Mix a tbsp of oil with the dough. Cover the dough and leave it aside for 20 minutes.

For Onion Kachori Stuffing

  • Take the following spices in a grinder - 1 tbsp cumin, 1 tbsp fennel, 1 tbsp kasuri methi, 2 tbsp coriander leaves.
    Grind them together.
  • Heat 3 tbsp oil in a pan
  • Add the coarse spices in the oil and saute on low flame.
  • Add 1/4 tsp hing
  • Add 3 tbsp gram flour. Mix it well
  • Add 4-5 chopped garlic cloves. Mix it well and cook for few seconds.
  • Add 3-4 chopped onion. Mix it well and cook it at medium to high flame for a minute
  • Add 3-4 chopped green chilli, 1 tsp Amchur Powder, 1 tsp Red Chilli Powder, 1/2 tsp black salt, 1 tsp garam masala, 1/4 tsp Turmeric powder, salt to taste. Mix well
  • Add 3 boiled and grated potato. Mix it well
  • Add 1/2 tsp sugar.
  • Add 2 onion slices. Mix it well and turn off the flame.
  • Let the stuffing cool off and prepare small balls in the shape of small lemon.
  • Apply some oil in your hands and mash the dough to make it smooth.
  • Make balls that are slightly bigger in size than the Stuffing balls.
  • Dust the balls with maida and give them a kachori shape
  • Place the stuffing in between, cover it, and flatten it with your palm.
  • Roll the sides and keep the middle thick.
  • Heat oil in a pan for frying
  • Fry the kachoris on low to medium heat until they turn golden brown.
  • Serve with green chutney.
