Pyaz ki kachori is a classic dish from the lands of Maharajas – Jodhpur so it is also known as Jodhpuri Pyaz Kachori. It has now become famous all over India due to its taste. It is made using flour and stuffed with a stuffing made of onion, potatoes, and spices. This Crispy Onion Kachori is served for breakfast or as a snack and is a very popular street food item along with Samosas and Tikki. I have shared a simple and popular method of making a crispy Pyaz ki kachori recipe which will make sure that the kachoris would not break and turn out perfect every time. The onion-based stuffing of the kachoris makes it unique and full of flavors compared to Aloo Kachori and Moong dal Kachori. It is traditionally made with maida or all-purpose flour. However, making it with wheat flour makes it healthier.

Ingredients to make Pyaz ki Kachori Recipe
For Dough
- 2.5 cups All purpose flour(Maida)
- 1/2 tsp carom seeds
- 1/2 tsp salt
- 1/4 cup Oil
For Stuffing
- 1 tbsp cumin
- 1 tbsp fennel
- 1 tbsp kasuri methi
- 2 tbsp coriander leaves
- 3 tbsp oil
- 1/4 tsp Hing
- 3 tbsp Gram Flour(Besan)
- 4-5 chopped Garlic cloves
- 3-4 chopped onion
- 3-4 chopped green chilli
- 1 tsp Amchur Powder
- 1 tsp Red chilli Powder
- 1/2 tsp black salt
- 1 tsp garam masala
- 1/4 tsp Turmeric powder
- salt to taste
- 3 Potatoes(Boiled and Grated/Mashed)
- 1/2 tsp Sugar
- 2 onion slices
- Oil for frying
Step-by-Step Instructions to Make Pyaz ki Kachori Recipe
How to make Pyaaz Kachori Dough
1) Take 2.5 cups of all-purpose flour in a mixing bowl.
2) Add 1/2 tsp carom seeds and 1/2 tsp salt. Mix it well. The carom seeds enhance the taste.
3) Add 1/4 cup refined oil.
Mix it well until you can see that it gets a firm shape and breaks off in hand easily.
4) Add water as required to prepare a soft dough. Keep adding water gradually and not all at once.
We do not have to roll the dough, so we will prepare a soft dough only.
5) Take a tbsp of oil in hand and mix it with the dough.
6) Cover the dough and leave it aside for 20 minutes.
How to make Pyaaz Kachori Stuffing
7) Take the following spices:
1 tbsp cumin
1 tbsp fennel
1 tbsp kasuri methi
2 tbsp coriander leaves
Grind them together. We don’t require a fine powder just a coarse or rough consistency.
8) Take a pan and add 3 tbsp oil, Let the oil heat slightly.
9) Once the oil is heated, add the coarse spices we made above. Saute them at low heat.
10) Add 1/4 tsp Hing as it will enhance the taste. Mix and cook well.
11) Add 3 tbsp gram flour. Mix it well.
Besan makes the stuffing dry which helps in making the kachori fluffy and won’t make it soggy.
12) Add 4-5 chopped garlic cloves. Mix it well and cook for a few seconds. It will give a nice smell.
13) Add 3-4 chopped onions. Mix it well and cook it at medium to high flame for a minute until the onions become soft.
14) Add 3-4 chopped green chilli.
Now add the following spices:
1 tsp Amchur Powder
1 tsp Red Chilli Powder
1/2 tsp black salt
1 tsp garam masala
1/4 tsp Turmeric powder
salt to taste
Mix everything well and cook for a minute.
15) Add 3 boiled and grated potatoes. Mix well the spices.
It helps to bind the spices together. You can also mash them.
16) Add 1/2 tsp sugar.
It will add a nice taste as it will maintain the taste of onions.
17) Add 2 onion slices. Mix it well and turn off the flame.
It will add a nice texture to the filling. We don’t have to cook it.
Our flavorful and peppery stuffing is ready.
18) Let the stuffing cool off and prepare small balls in the shape of a small lemon.
19) In the same manner, use all the stuffing mixture to prepare the balls.
20) Now take the dough. Apply some oil to your hands and mash it to prepare a soft dough
21) Now prepare balls out of it. The balls should be slightly bigger in size than the stuffing balls we made above.
22) Now, dust the balls with maida and give them a kachori shape.
23) Place the stuffing in between
24) Cover it and flatten it with your palm.
25) Next, roll it with your fingers to make it slightly bigger in size.
We need to spread the sides and the middle should be thick. This will make sure that the Kachori would be fluffy and would not break.
26) Heat oil in a kadhai and add the kachoris for frying on low to medium flame.
Don’t cook on high flame or it will turn red and burn.
27) Flip them once one side gets fried.
28) Fry the kachoris until they turn golden brown.

- Mix a tbsp of oil with the dough. Cover the dough and leave it aside for 20 minutes.

- Take the following spices in a grinder – 1 tbsp cumin, 1 tbsp fennel, 1 tbsp kasuri methi, 2 tbsp coriander leaves.Grind them together.
- Heat 3 tbsp oil in a pan
- Add the coarse spices in the oil and saute on low flame.
- Add 1/4 tsp hing
- Add 3 tbsp gram flour. Mix it well
- Add 4-5 chopped garlic cloves. Mix it well and cook for few seconds.
- Add 3-4 chopped onion. Mix it well and cook it at medium to high flame for a minute
- Add 3-4 chopped green chilli, 1 tsp Amchur Powder, 1 tsp Red Chilli Powder, 1/2 tsp black salt, 1 tsp garam masala, 1/4 tsp Turmeric powder, salt to taste. Mix well
- Add 3 boiled and grated potato. Mix it well
- Add 1/2 tsp sugar.
- Add 2 onion slices. Mix it well and turn off the flame.
- Let the stuffing cool off and prepare small balls in the shape of small lemon.
- Apply some oil in your hands and mash the dough to make it smooth.
- Make balls that are slightly bigger in size than the Stuffing balls.
- Dust the balls with maida and give them a kachori shape
- Place the stuffing in between, cover it, and flatten it with your palm.
- Roll the sides and keep the middle thick.
- Heat oil in a pan for frying
- Fry the kachoris on low to medium heat until they turn golden brown.
- Serve with green chutney.
