Paneer Tikka Masala Recipe

The Paneer Tikka Masala Recipe features the very popular Paneer dish that you get in your favorite restaurants. It is super delicious, full of flavors and I’ve made it in restaurant style without tandoor or oven. As most of the normal Indian Households do not have a tandoor or oven, you can try this for that spicy and rich flavor at home that you get only in restaurants. Paneer tikka masala is one of many Paneer curries and is made with marinated and grilled paneer tossed in creamy and spicy tikka masala. It is loved by everyone and is a vegetarian version of the world-famous Chicken Tikka Masala and is served as a side dish to roti, naan, and rice. In this recipe, I’ll show you how to make Paneer Tikka which is a very popular starter, and then prepare Paneer Tikka Masala.

What is Paneer Tikka Masala

Paneer Tikka Masala is a gravy and masala version of our favorite starter – Paneer Tikka. I’ve already shared the recipe for that. It adds more spices and masala to the Paneer Tikka so that it can be eaten as a side dish with Butter Naan, Jeera rice, and roti. It adds marinated and grilled paneer (Indian cottage cheese) to a spicy Tikka Masala Gravy. To make Paneer Tikka Masala, First, marinate the paneer. I’ve shown how you can grill it without tandoor or tawa or oven directly on stovetop flame. Second, we can the tomato-based tikka masala gravy with added cream or cashews for a rich creamy texture and amazing flavor. We can make this flavorful dish at home without a tandoor or oven.

Paneer tikka masala Ingredients

  • For marinating Paneer
    2 tbsp Mustard oil
    2 tbsp gram flour(besan)
    1 tbsp Kashmiri red chilli powder
    1 tsp chat masala
    1/2 tsp Kasuri methi
    1/2 tsp garam masala
    1/2 tsp cumin powder
    1/2 tsp black pepper powder
    4 tbsp fresh curd
    1 tbsp lemon juice
    1 chopped capsicum
    1 onion petals
    1 tbsp ginger garlic paste
    200 gm paneer cubes
  • For Paneer tikka Masala
    2 tbsp oil
    1 cup finely chopped onion
    1 tsp salt
    1 tbsp ginger garlic paste
    1 finely chopped tomato
    2 tbsp oil for gravy
    3 black cardamom
    1 tsp corn flour and 4 tbsp water for cornflour slurry
    1 tsp coriander powder
    1/2 tsp black pepper powder
    1 tsp Kashmiri red chilli powder
    1 pinch of red food color
    3 tbsp coriander leaves
    3 chopped green chilli
    1/2 cup water
    1 tbsp malai/cream

Paneer tikka masala recipe step by step with pictures

1. Add 2 tbsp Mustard oil to a kadhai/pan. Heat on high flame. After the smoke comes on heat the oil, and turn off the flame. Mustard oil is good for health so I always use it for cooking.

2. Add 2 tbsp gram flour to the oil. Cook it for 2-3 minutes. Don’t turn on the flame. The besan will roast in the oil itself as it is still hot.

3. Add 1 tbsp Kashmiri red chilli powder. Mix and cook it well with the besan and oil.

4. Transfer the mixture to a mixing bowl.

5. Add the following spices to the mixing bowl:
1 tsp chat masala
1/2 tsp Kasuri methi
1/2 tsp garam masala
1/2 tsp cumin powder
1/2 tsp black pepper powder

6. Add 4 tbsp Fresh curd to the bowl.

7. Add 1 tbsp lemon juice to the bowl and mix everything well.

8. The spice mixture is ready.

9. Add 1 chopped capsicum, 1 onion petal, and 1 tbsp ginger garlic paste. Mix everything well.

10. Add 200 gm Paneer Cubes. Mix well and coat the paneer in the mixture. Cover it and leave it aside to marinate for 20 minutes. you can also make Paneer at home with milk which makes it even more delicious.

11. In the meantime, Let’s make masala for Paneer tikka. heat 2 tbsp oil in a kadhai/pan on medium flame and add 1 cup finely chopped onion and 1 tsp salt.

12. Fry on high flame until the onion gets crispy and turns golden brown in color. Keep stirring or the onion may burn.

13. Add 1 tbsp ginger garlic paste. Cook until the rawness of the ginger goes away. You can see the nice color below.

14. Add 1 finely chopped tomato. Mix well. Cover the lid and cook on low flame until it gets soft. Stir in between. I stirred it 2-3 times in a gap of 2 minutes.

15. Once it gets soft, keep stirring and cook on medium flame also, mash the tomatoes with the spatula.

16. Keep cooking until the tomatoes leave the oil. Now, transfer it to a separate bowl and let it cool.

17. Grind it to make a paste. Our onion-tomato gravy base is ready.

18. Let’s check the Paneer. It is marinated well with spices. Mix it well and take tikka/tandoori sticks.

19. Add the capsicum, onion, and paneer to the tikka sticks.

20. Now, cook over direct flame. Rotate the sticks and cook well on a high flame.

21. Similarly, cook the others. You can eat it like this with green chutney and I’ve given the recipe for dry Tandoori Paneer Tikka and spicy green chutney.

22. Now, we will take it out on a plate. Leave the leftover marinated masala in the bowl itself.

23. Heat 2 tbsp oil in a pan. Once the oil is heated, add 3 black cardamom. Stir it and mix it well.

24. Add the onion-tomato paste. Mix it well. Now cover the lid and cook for 3 minutes on low flame.

25. In the meantime, prepare a corn flour slurry. Mix 1 tsp corn flour with 4 tbsp water and mix well so that there are no lumps. Keep it aside for now.

26. Remove the lid, stir, and mix well. Add the following spices:
1 tsp coriander powder
1/2 tsp black pepper powder
1 tsp Kashmiri red chilli powder
1 pinch of red food color
Mix everything well and cook on low flame.

27. Add 3 tbsp coriander leaves, 3 chopped green chilli, and leftover marinated masala. Mix well

28. Cook on low flame for 3-4 minutes.

29. Add the corn flour slurry and mix well.

30. Now, add the paneer tikka and 1/2 cup of water. Mix well.

31. Add 1 tbsp cream/malai. Mix it well. Cook for 3-4 minutes on low flame. I’ve also given the recipe for Homemade Malai from milk.

32. Paneer Tikka Masala is ready.

Paneer Tikka Masala Recipe

Ingredients
  

For Marinating Paneer

  • 2 tbsp oil
  • 200 gm paneer cut into cubes shpae
  • 2 tbsp gram flour
  • 1 tbsp Kashmiri red chilli powder
  • 1 tsp chaat masala
  • 1/2 tsp Kasuri Methi
  • 1/2 tsp Garam Masala
  • 1/2 tsp Cumin Powder
  • 1/2 tsp black pepper powder
  • 4 tbsp fresh curd
  • 1 tbsp lemon juice
  • 1 chopped capsicum
  • 1 onion petals
  • 1 tbsp ginger garlic paste

For Spicy Tikka Masala

  • 2 tbsp oil
  • 1 cup finely chopped onion
  • 1 tsp salt
  • 1 tbsp ginger garlic paste
  • 1 finely chopped tomato
  • 2 tbsp oil for gravy
  • 3 black cardamom
  • 1 tsp corn flour
  • 4 tbsp water for slurry
  • 1 tsp coriander powder
  • 1/2 tsp black pepper powder
  • 1 tsp Kashmiri Red chilli powder
  • 1 pinch red food color
  • 3 tbsp coriander leaves
  • 3 chopped green chilli
  • 1/2 cup water
  • 1 tbsp Malai(cream)

Instructions
 

For Marinating Paneer

  • Heat 2 tbsp mustard oil in a pan on high flame and once it is heated, tunr off the flame.
  • Add 2 tbsp gram flour to the oil. Cook it for 2-3 minutes.
  • Add 1 tbsp Kashmiri red chilli powder. Mix and cook well. Transfer the mixture to a mixing bowl.
  • Add the following spices to the mixing bowl for the mixture:
    1 tsp chat masala, 1/2 tsp kasuri methi, 1/2 tsp garam masala, 1/2 tsp cumin powder, 1/2 tsp black pepper powder, 4 tbsp Fresh curd and 1 tbsp lemon juice and mix everything well.
  • Add 1 chopped capsicum, 1 onion petals and 1 tbsp ginger garlic paste. Mix everything well.
  • Add 200 gm Paneer Cubes. Coat the paneer in the mixture. Cover it and leave it aside to marinate for 20 minutes.

For Tikka Masala

  • Heat 2 tbsp oil in a kadhai/pan on medium flame and add 1 cup finely chopped onion and 1 tsp salt. Fry on high flame until the onion gets crispy and turns golden brown in color. Keep stirring.
  • Add 1 tbsp ginger garlic paste. Cook until it gets soft and loses its raw flavor.
  • Add 1 finely chopped tomato. Mix well. Cover the lid and cook on low flame until it gets soft.Stir in between. I stirred it 2-3 times in a gap of 2 minutes.
  • Stir and Mash the tomatoes with the spatula. Keep cooking until the tomatoes leaves oil. Now, transfer it to a separate bowl and let it cool.
    Grind to make a fine paste for gravy base. Keep it aside.
  • Now, add the marinated panner and other veggies to Tikka/Tandoori sticks. Cook directly on Stovetop flame on high flame and keep aside on a plate.

For Gravy Tikka Masala

  • Heat 2 tbsp oil in a pan. Once the oil is heated, add 3 black cardamom. Stir it an mix it well.
  • Add the onion-tomato paste. Mix it well. cover the lid and cook for 3 minutes on low flame.
  • Mix 1 tsp corn flour with 4 tbsp water and mix well so that there are no lumps for cornflour slurry.
  • Remove the lid, stir and mix well. Add the following spices:
    1 tsp coriander powder, 1/2 tsp black pepper powder, 1 tsp Kashmiri red chilli powder, 1 pinch red food color
    Mix everything well and cook on low flame.
  • Add 3 tbsp coriander leaves, 3 chopped green chilli and leftover marinated masala. Mix well.
    Cook on low flame for 3-4 minutes.
  • Add the corn flour slurry and mix well.
  • Now, add the paneer tikka and 1/2 cup water. Mix well.
  • Add 1 tbsp cream/malai. Mix it well. Cook for 3-4 minutes on low flame.
  • Paneer Tikka Masala is ready. Serve with naan, rice and roti. Enjoy.
