To make Ragi Halwa, take 1/2 cup jaggery in a Pan.
Add 1 cup of water to the pan and turn on the gas. Let it come to a boil, and then cook till the jaggery melts completely. Our jaggery syrup is ready now.
Now, take a Kadai or Pan, and add 2 tbsp of Desi Ghee to it, and then roast 5-6 almonds in it.
After roasting almonds for a bit, add 5-6 cashews to the Kadai and roast them as well for a bit. We add cashews later, as they get roasted quickly.
After roasting, take out the cashews and almonds. Keep aside.
Add 1/2 cup of Ragi Flour to the Kadai on a low flame.
Mix and roast the Ragi with the Ghee very well until it changes color and gives a very nice aroma.
Add 1 tbsp of Ghee, and roast it well on a low flame for a few minutes. You can see the consistency below.
Now, add the jaggery syrup little by little and mix well.
Keep stirring the mixture consistently.
You will see that the mixture will start to thicken very quickly. Just keep stirring.
As soon as it thickens to 4/5, add 1/2 tsp of cardamom powder for flavor. Mix well.
After mixing, add the roasted cashews and almonds. Mix well.
After a few minutes, the Halwa will start leaving the Pan; you can see the texture below. The Halwa is ready now. Let it cool down.
Garnish with dry fruits. Enjoy the delicious and healthy Ragi Halwa.
