Rice Cutlet or Chawal ki Tikki is a delicious and crispy snack made from Leftover Rice, mixed vegetables, and spices.

Ingredients
  

  • 1.5 cups of leftover Rice. You can also use normal rice after cooking it.
  • ½ chopped capsicum
  • 1 grated carrot
  • 2 chopped onions
  • ¼ cup chopped coriander leaves
  • 3 boiled & grated potato
  • 3 chopped green chilli
  • 1 cup of dry roasted Gram Flour.
  • 1 tsp cumin
  • 1 tsp coriander powder
  • ¼ tsp Turmeric powder
  • ½ tsp Red chilli powder
  • salt to taste
  • 1/4 cup of cooking Oil for frying. I normally use Mustard oil for cooking.

Instructions
 

  • Take 1.5 cups of Leftover Rice
  • Prepare the following veggies: ½ chopped capsicum, 1 grated carrot, 2 chopped onions, ¼ cup chopped coriander leaves, 3 boiled & grated potatoes, and 3 chopped green chilli. Also, take 1 cup of dry roasted Gram Flour.
  • Take a mixing bowl. Add the leftover rice and all the veggies.
  • Add the following spices: 1 tsp cumin, 1 tsp coriander powder, ¼ tsp Turmeric powder, ½ tsp Red chilli powder, salt to taste, and ½ cup gram flour. Mix everything well to give it a dough-like shape.
  • Grease your hands with ghee or oil. Create small balls out of the mixture. Give them a Tikki-like shape.
  • Prepare all the Tikki in the same manner.
  • Heat ¼ cup of cooking oil on medium flame. Once the oil is heated, we will shallow fry the Rice Tikki.
  • Fry both sides of the Rice Cutlet evenly. Serve with green chutney.
