Take 1.5 cups of Leftover Rice
Prepare the following veggies: ½ chopped capsicum, 1 grated carrot, 2 chopped onions, ¼ cup chopped coriander leaves, 3 boiled & grated potatoes, and 3 chopped green chilli. Also, take 1 cup of dry roasted Gram Flour.
Take a mixing bowl. Add the leftover rice and all the veggies.
Add the following spices: 1 tsp cumin, 1 tsp coriander powder, ¼ tsp Turmeric powder, ½ tsp Red chilli powder, salt to taste, and ½ cup gram flour. Mix everything well to give it a dough-like shape.
Grease your hands with ghee or oil. Create small balls out of the mixture. Give them a Tikki-like shape.
Prepare all the Tikki in the same manner.
Heat ¼ cup of cooking oil on medium flame. Once the oil is heated, we will shallow fry the Rice Tikki.
Fry both sides of the Rice Cutlet evenly. Serve with green chutney.
