This Rice Cutlet Recipe shows how you can use the leftover rice from the previous day to make a very delicious and crispy snack at home. Rice is also called “Chawal” and Cutlet is also known as “Tikki”, so it is also known as “Chawal ki Tikki” or “Rice Tikki”. In this Rice Tikki Recipe, I’ll use leftover rice, veggies, and spices to make a healthy and crispy evening snack that you can enjoy with tea. This will also let you use the leftover rice from last night and make something delicious other than the usual Veg Fried Rice. This is an easy snack that can be ready in just a few minutes with any type of cooked rice, mixed vegetables, and spices. You can also make changes and use the vegetables as per your preference.

Rice Cutlet Recipe Ingredients
- 1.5 cups of leftover Rice. You can also use normal rice after cooking it.
- ½ chopped capsicum
- 1 grated carrot
- 2 chopped onions
- ¼ cup chopped coriander leaves
- 3 boiled & grated potato
- 3 chopped green chilli
- 1 cup of dry roasted Gram Flour.
- 1 tsp cumin
- 1 tsp coriander powder
- ¼ tsp Turmeric powder
- ½ tsp Red chilli powder
- salt to taste
- 1/4 cup of cooking Oil for frying. I normally use Mustard oil for cooking.
How To Make Rice Cutlet/Rice Tikki from Leftover Rice
1. Take 1.5 cups of Leftover Rice.
2. Prepare the following veggies: ½ chopped capsicum, 1 grated carrot, 2 chopped onions, ¼ cup chopped coriander leaves, 3 boiled & grated potatoes, and 3 chopped green chilli. Also, take 1 cup of dry roasted Gram Flour.
3. Take a mixing bowl. Add the leftover rice and all the veggies.
4. Add the following spices: 1 tsp cumin, 1 tsp coriander powder, ¼ tsp Turmeric powder, ½ tsp Red chilli powder, salt to taste, and ½ cup gram flour. Mix everything well to give it a dough-like shape.
5. Grease your hands with ghee or oil. Create small balls out of the mixture. Give them a Tikki or Cutlet-like shape.
6. Prepare all the Tikki in the same manner.
7. Heat ¼ cup of cooking oil on medium flame. Once the oil is heated, we will shallow fry the Rice Tikki.
8. Keep flipping to fry both sides of the cutlet evenly.
9. Similarly, fry the other Rice Cutlet in batches. You can also use an air fryer to fry them.
10. Serve the crispy Rice Tikki with spicy Green Chutney. This way, you will be able to make a delicious evening snack from the leftover Rice. Enjoy.
