Vegetable fried rice Recipe Indian style

Fried Rice is a very popular Indo-Chinese dish and in India, it is a very popular street food. It is usually served as a side dish with other popular Chinese dishes such as Manchurians and Egg chilies. There are so many variations of Fried Rice that make it unique and very versatile. There are both veg and non-veg version of Fried Rice such as Vegetable Fried Rice and Egg Fried Rice. I also love making Fried rice when there are special occasions or festivals. Today, I’ll share with you a simple Vegetable fried rice Recipe Indian style that I usually make during lunch or dinner with Manchurian gravy and dal or when I have leftover rice from the previous day. If you like, you can eat it without any side dishes too.

Fried rice is usually made with eggs, veggies, and meat in South East Asian Countries. This simple Indian Style Veg Fried Rice recipe uses cooked rice and fries it with veggies and spices. The veggies and spices add a great flavor to the rice. You can also add other veggies such as carrots, beans, capsicum, and spices to make an even better Vegetable Fried Rice. There are a lot of variants of fried rice and this is the simple fried rice recipe in Indian style. I’ll share other recipes soon. I’ve given a video and step-by-step instructions with photos so that you can easily make it.

Vegetable fried rice Recipe Indian style Ingredients

  • 2 cups of cooked rice – Use long-grain basmati rice
  • 4 tbsp oil
  • 1 tsp cumin
  • 1 chopped green chilli
  • 1 chopped onion
  • 1 chopped tomato
  • salt to taste
  • 1.5 cup fresh peas(matar)
  • 1/4 tsp turmeric powder
  • 1 tsp coriander powder
  • Coriander leaves

How to make Veg fried rice from Leftover rice(Step-by-step Instructions)

1.Take 2 cups of cooked rice and keep it aside. Use long grain or Basmati rice. You can also use leftover rice to make this easy and quick fried rice recipe. I’ve used leftover rice from the previous day.

2. Now, heat 4 tbsp oil in a kadai/wok at high flame.

3. Once the oil is heated, Add 1 tsp cumin, 1 chopped green chilli, and 1 chopped onion and saute it.

4. Add 1 chopped tomato and salt as per taste.

5. Add fresh peas and cover the lid to let it cook. Cook it for 3-4 minutes. After 4 minutes, remove the lid to stir the mixture and also check if the peas and tomato pieces have become soft or else cover it again and let it cook for 2 more minutes.

6. After 2 minutes, remove the lid and add 1/4 tsp turmeric powder, 1 tsp coriander powder, and chopped coriander leaves, and mix everything well.

7. Now, Add the rice and mix it well with the mixture.

8. Serve it hot along with dal fry or Manchurian. You can also eat it as a snack on its own. Enjoy your delicious and simple fried rice.

Ingredients
  

  • 2 cup cooked rice

Instructions
 

  • Take 2 cup cooked rice
  • Heat oil in a pan
  • Add cumin, chopped green chilli, chopped onion and saute it.
  • Add chopped tomato and salt as per taste.
  • Add fresh peas and cover the lid. Cook it for 3-4 minutes.Remove the lod to stir the mixture and check if the peas and tomato has become soft or else cover and cook for 2 more minutes.
  • Add turmeric powder, coriander powder, chopped coriander leaves and mix well.
  • Add rice and mix well.
  • Serve it hot.
