To make Rava Uttapam, take a large mixing bowl and add 1 cup of Fine Rava/Suji/Sooji(Semolina).
Now, add 1/2 cup curd to the bowl.
Add 1/2 cup water to the bowl.
Mix well using a hand whisker.
The mixture's consistency is thick. However, we will cover it and leave it to rest for 10 more minutes so that Suji swells up.
After 10 minutes, add 1/2 tsp Salt, 1 tsp finely chopped curry leaves, Ginger, and Green Chilli.
Mix everything well. Start adding water to the mixture.
The batter's consistency is perfect—it is not too thick or too runny. Keep it aside.
Keep the following veggies ready: finely chopped tomatoes, onions, green capsicum, coriander leaves and grated carrots.
Heat a Pan on medium flame. Brush with Desi Ghee. Pour 2 large tablespoons of batter and spread it gently.
Top with veggies.
Press Gently. Sprinkle 1/2 tsp Desi ghee.
Flip to the other side and press gently to cook both sides.
Our Suji/Rava Uttapam is ready now.
