This Kerala-inspired Plum Cake is made completely without eggs and alcohol, making it a perfect Christmas treat for everyone. Traditionally, Kerala plum cake is famous for its rich flavor that comes from soaking dry fruits in rum for months. In this eggless version, we recreate the same depth of taste using a special homemade caramel and fruit juices.
What sets this plum cake apart from regular fruit cakes is the caramel, which not only gives the cake its beautiful, deep brown color but also adds a distinctive, rich flavor. For this recipe, I soaked the dry fruits in orange juice, but you can easily substitute it with grape juice or apple juice as per your preference. Making the caramel is simple—just cook the sugar on a low flame while stirring continuously until it reaches the perfect color. The generous amount of dry fruits and nuts makes this cake wonderfully rich and festive. Soaking the fruits for 24 hours helps them plump up, making the cake incredibly moist and flavorful.

Plum Cake Ingredients
- 1 cup Mixed Berries – Cranberries, Blueberries, Strawberries, Apricots
- 1/4 cup Mixed Green Raisins, Black Raisins, Tutti Frutti
- Orange Juice – Tetra Pack
- 1/2 cup Brown Sugar
- 1/2 cup Water
- Desi Ghee as required
- 1/2 cup powdered sugar
- 1/4 cup melted butter
- 1 tbsp Vanilla Essence
- 1.5 cup All-purpose-flour
- 2 tbsp chopped Cashews and Almonds
- 2-3 tbsp Milk
- 1/2 tsp dry ginger powder
- 1/2 tsp cinnamon powder
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp Vinegar
- Cashews, Walnuts, Raisins, and Almonds to top the Cake
How To Make Plum Cake
1. To make Plum Cake, first, we need to soak the driedfruits. Take a bowl and add 1 cup mixed berries, such as Cranberries, Blueberries, Strawberries, and Apricots.

2. Next, in the same bowl, add 1/4 cup of mixed Green Raisins, Black Raisins, and Tutti Frutti.

3. Pour Orange juice into the bowl. Use the Tetra pack, not the fresh one. Cover it and soak for 24 hours.

4. After soaking for 24 hours, our dry fruits are ready to make the Cake.

5. In the next step, we need to caramelize the sugar. Take a Kadai and add 1/2 cup of brown sugar. Let it melt on a low flame.

6. Once it melts a little, we will start mixing the mixture. Keep the flame on low; otherwise, the sugar may burn.

7. Keep stirring continuously, and let the sugar melt completely.

8. Once the sugar melts completely, stir and mix until it becomes liquid, and then add 1/2 cup of water.

9. Now, you have to stir and mix it continuously on a medium flame. The lumps will melt, and the mixture will take on a honey-like consistency when it cools down.

10. Next, take the Cake Tin in which we will bake the Cake. Brush it with desi ghee and place the butter paper, and then grease it with desi ghee too.

11. Take a bowl, add 1/2 cup of powdered sugar.

12. Add 1/4 cup of melted butter and mix well.

13. Add the soaked dry fruits, nuts, and the caramel sugar into the bowl. Mix everything.

14. Add 1 tbsp of Vanilla Essence. Mix it well.

15. Add 1 cup of All-purpose-flour. Mix well.

16. After mixing for a while, I added 1/2 cup of Maida again. Mix well.

17. Once the mixture gets dense, add 2 tbsp of chopped Cashews and Almonds. Mix well.

18. Next, add 2-3 tbsp of Milk. This milk is boiled and then cooled down at room temperature.

19. Add 1/2 tsp dry ginger powder and 1/2 tsp cinnamon powder. Mix well.

20. Add 1 tsp baking powder and 1/2 tsp baking soda. Mix well.

21. In the end, we will add 1 tsp of Vinegar.

22. Now mix the mixture. The mixture is completely for making the Plum Cake.

23. Transfer the mixture to the cake tin now. You can top the cake with dry fruits and nuts such as Raisins, cashews, and walnuts.

24. Now, we will bake the cake without an oven. We are using a cooker. Add salt(around 1/2 cup), and then cover the cooker and preheat it on a high flame. After 10 minutes, remove the lid. Place a stand or a small plate, inverted, on top of the salt, and then place the cake tin on top of the plate.

25. Cover the lid, remove the whistle. You need to bake it first on a high flame for 5 minutes and then for 45 minutes at least on a low flame. You can always check if it has baked well by inserting a bamboo stick in the middle. If it comes out clean, then it has baked; otherwise, you need to bake it for more time. Here, as you can see, it didn’t come out clean, so it needsmore baking.

26. Here, I baked it for another 40 minutes as the height of the cake was higher, so it took more time. If you are baking it in a large rectangular or circular tin, then it will take less time. Keep checking time to time by inserting the stick in the middle.

27. After the cake has baked well, we will cover it with a damp cloth to cool it down.

28. Now, remove the butter paper from the sides and the base.

You can check how well the cake has come out.

29. Dust the cake with powdered sugar(optional).

30. The delicious Plum Cake is ready to serve now.
