Malai Kulfi is a very rich and creamy traditional Indian Ice cream recipe. It is better than normal ice creams as it is made using dry fruits, cream, milk, and mawa. It is available in different varieties and flavors like the normal Malai Kulfi, Kesar pista kulfi, Kesar Kulfi, Mango Kulfi, Rose Kulfi, etc. It is usually made using condensed milk but in this Kulfi recipe, I’ll show you how to make Kulfi without condensed milk and without using milk powder or custard powder. In this recipe, I’ve only used Mawa and whipped cream and simmered full cream milk with added dry fruits and cardamom powder for flavor. This is a quicker and easier method than normal Malai Kulfi.

This simple and easy Kulfi ice cream recipe uses milk, mawa(khoya), and whipped cream to make a delicious, creamy, and exotic Indian ice cream that is delicious and would surprise your friends and family. The kids will especially love this during the hot summer months. It is also used to make other dishes such as Kulfi Falooda and it has so many varieties and they all have different flavors but taste amazing. To make Kulfi quickly, I’ve used Mawa or Khoya which thickens the milk and it is not required to make Rabdi to make traditional Kulfi.

Malai Kulfi Ingredients

  • 500 ml milk
  • 1 tsp cardamom powder
  • 1/2 cup Mawa/Khoya
  • 1/2 cup brown sugar
  • 1/2 cup whipped cream
  • 1/2 tsp kewra water
  • 1/4 cup Almonds/Cashew (10-12 cashews and almonds soaked in water for 4 hours)

How to Make Malai Kulfi Recipe without condensed milk

1. Take 500 ml milk. Boil it and turn the flame of the gas to medium once a boil comes.

2. Add 1 tsp cardamom powder for the flavor.

3. Add 1/2 cup Mawa or Khoya. I’m using homemade Mawa. I’ve also given the recipe on how to make Mawa from milk at home.

4. Add 1/2 cup brown sugar. You can also use normal sugar or Mishri as per your preference.

5. Stir and cook on low to medium flame for 7-8 minutes.

6. After 8 minutes, take out 1/2 cup milk.

7. Take a mixer or blender. Add 1/4 cup soaked almonds and cashews and 1/2 cup milk we just took out.

8. Blend it to a smooth consistency.

9. Add the almond cashew paste to the milk. Cook for 2 minutes on low to medium flame. Stir and mix well. After 2 minutes, turn off the flame and let it cool.

10. After 1 hour, the milk has thickened. Scrap the sides and add to the mixture.

11. Blend the mixture in a grinding jar to make it creamy and lump-free. Keep it aside.

12. Take 1/2 cup whipped cream in a bowl and whip for 6-7 minutes.

13. Add the milk mixture to the bowl and add 1/2 tsp kewra water for flavor.

14. Whip for 3-4 minutes. The kulfi ice cream base is ready.

15. Pour the kulfi ice cream base into kulfi molds. Close the lid and insert ice cream sticks.

16. Freeze overnight. The Kulfi ice cream is ready.

17. Rub it between your hands and it will come out easily.

  • Take 500 ml milk. Boil it and after 1 boil, turn the flame to medium.
  • Add 1 tsp cardamom powder for the flavor.
  • Add 1/2 cup Mawa or Khoya.
  • Add 1/2 cup brown sugar.
  • Stir and cook on low to medium flame for 7-8 minutes.
  • After 8 minutes, take out 1/2 cup milk.
  • Take a mixer or blender. Add 1/4 cup soaked almonds and cashews and 1/2 cup milk we just took out.
  • Blend it to a smooth consistency.
