Rice Kheer or Rabdi Kheer Recipe is a very popular traditional Indian dessert that is creamy and delicious. It is made up of two of my favorite sweet dishes – Rabdi and Kheer. Rabdi is made using milk where we cook milk with sugar until it is thickened, while kheer is a pudding made with rice, milk, sugar, and other spices for flavor. Kheer is a very popular dessert in India and it is made and served at almost every festival and special occasions. Rabdi kheer is prepared by cooking soaked rice with milk until the milk thickens and forms a pudding-like consistency and then it is refrigerated to make it even more thicker. You can garnish it in any way you like to such as with chopped nuts like almonds, cashews as well as raisins and saffron strands. Serve it chilled (this makes it taste even better)or at room temperature.

Rice Kheer Ingredients
- 1 liter full cream milk
- 2 tsp water
- 3 tbsp rice
- 7-8 tsp sugar
- 2-3 cardamom
- 7-8 cashews
- 7-8 saffron strands
How to make Thick Kheer (Step-by-Step Instructions)
1. Wash and soak 3 tbsp rice for 4-5 hours
Mash it with your hands. Keep it aside.
2. In a heavy-bottomed pan, add 2 tsp water and 1 liter full cream milk and bring it to one boil.
3. Once it boils, Add rice and mix well.
4. Cook on low heat, stirring frequently, until the rice is fully cooked and the milk has thickened. This will take around 10-15 minutes.
5. Add sugar once the rice is cooked.
6. Add cardamom powder and crushed cashews. Cook for another 5-10 minutes until it thickens.
7. You can also add chopped almonds and chopped pistachios. If you are planning to add raisins, let the kheer cool down first.
8. Turn off the flame once it gets thicker. Let the kheer cool down to room temperature.
9. Refrigerate it for half an hour before serving. It will get a Rabdi-like texture and consistency.
10. Garnish with more chopped nuts and saffron strands and serve. Enjoy your homemade delicious kheer! Your friends and family members will be surprised by this dish.

Rice Kheer | Rabdi kheer Recipe
Ingredients
- 1 litre full cream milk
- 2 tsp water
- 3 tbsp rice
- 7-8 tsp sugar
