In this Ghevar sweet recipe, I’ve shown two variants of Ghevar – Simple Dry fruit Ghevar and Creamy Rabri or Malai Ghevar. Ghevar is one of the very famous Rajasthani Sweets, a disc-shaped Mithai, which has a Jaali-like texture, made with Maida, Ghee, and Sugar Syrup, topped with spices, saffron, and chopped nuts. Originally, it was used as a royal delicacy served to the Maharajas, but it slowly made its way to the common people. This is my first time making this sweet dish. Thank God, that it turned out to be perfect as I was making it without the Ghewar Mold or ring that is used to make this famous mithai at Halwai Shops. It is usually prepared for the festivals such as Teej and Rakshabandhan during the month of Shravan, and also served to Lord Krishna as an offering. Today, I’ve shared two of its most common variants – plain and Malai Ghevar, and I’m sure that you will love this delicious sweet that has a cake-like consistency.

Ghevar Ingredients
Making Sugar Syrup for Ghevar
- 1/2 cup of sugar
- 1/2 cup of water
- 1/4 tsp of saffron strands
- 1/4 tsp crushed cardamom
For Ghevar Batter
- 2 tbsp Desi ghee
- 4-5 ice cubes
- 1 cup all-purpose flour
- 1 tbsp gram flour
- 2 cups chilled water
- 1 tsp lemon juice
For Frying and Garnishing Ghevar
- 3 cups of deși ghee
- Laccha Rabri
- Chopped Almonds, Pistachios, & Silver Vark, Rose Petals
How To Make Simple and Malai Ghevar Sweet without a Mold
1. To make Ghevar at home, take a saucepan and add 1/2 cup of sugar and 1/2 cup of water to create a sugar syrup for the sweets. Let the sugar melt properly on a low flame. Keep stirring.

2. Once the sugar melts completely, add 1/4 tsp of saffron strands(10-15) to the pan. Also, add 1/4 tsp crushed cardamom to the pan and cook for 7-8 minutes on medium flame. Our perfect sugar syrup is ready now.

3. Add 2 tbsp of Desi ghee(in liquid form) in a large bowl, and 4-5 ice cubes in it.

4. Now, beat the mixture in a circular motion for a few minutes.

5. We have to beat the mixture until it gets a butter-like consistency.

6. Now, add 1 cup all-purpose flour and 1 tbsp gram flour. Mix well with the mixture.

7. Add 1 cup of chilled water. Mix using a hand whisker, then add 1 cup of chilled water again, and whisk to remove any lumps. Finally, add 1 tsp of lemon juice and mix well.

8. Sieve the mixture and remove any lumps.

9. Now, we will mix the mixture again to make sure that there are no lumps in it. Here, the mixture is finally ready, and there are no lumps.

10. Fill the batter in a sauce bottle.

11. Heat 3 cup deși ghee în a pot. Pour the batter in the center of the pot, little by littl,e to make ghevar.

12. We don’t have to put all the batter in at once. The poured batter will foam and spread. Let it settle, and then pour more batter, creating a hole in between with the spoon’s end.

13. The Ghevar will be cooked and get the perfect Honeycomb(Jaali)-like texture. Take it out from the middle using the spoon’s end.

14. Likewise, we will make the other Ghevar in the same manner. You can see how easy it is to make Ghevar without a Mould.

15. First of all, we will prepare the simple Ghevar, and it requires slightly more sugar syrup compared to Malai Ghevar. So, we will pour sugar syrup, and after that, we will garnish it generously with chopped almonds, pistachios, and a layer of silver bark to enhance its taste and presentation. You can serve this crispy plain Ghevar like this, or proceed to make the Malai Ghewar.

16. To make the Malai Ghevar, pour the sugar syrup on the plain Ghevar.

17. Pour some thick Laccha Rabri on it. You can check my Homemade Laccha Rabri recipe for this.

18. Garnish with chopped almonds & Pistachios, silver vark, and rose petals.

- Make the other Ghevar in the same way. You can see how easy it is to make Ghevar without a Mold.
- Pour sugar syrup on the Ghevar.
- Garnish with chopped almonds & Pistachios, silver vark, and rose petals.
- For the simple Ghevar, we will pour more sugar syrup on it compared to Malai Guevara, and garnish with chopped almonds, pistachios, and silver bark.
