This Vanilla-flavored ice cream requires very few ingredients like milk, sugar, vanilla essence, and cream. The milk used in this recipe is full cream milk. This ice cream is my personal favorite in the hot summer season. It also goes well with other summer special drink recipes such as Mango Milkshakes, and Cold Coffee as it just enhances the taste of those drinks. You don’t need to use an ice cream maker for this recipe and I’ve shown the easy way to make Ice cream with a blender. - 3/4 cup whipping cream
- 2 tsp vanilla essence
How to make Vanilla Ice cream at home (Step-by-Step Instructions)
1. Take 500 ml milk in a large pan. Let it boil on high flame. I use full cream milk for making this ice cream.
2. Take 6-7 tbsp milk out of it in a separate small bowl and mix it with 2 tbsp of corn flour to make a corn flour slurry.
3. Make sure that there are no lumps in it. keep it aside for now.
4. After 1 boil, turn the flame to medium and let the milk simmer for 5 minutes.
5. Mix it well and pour the corn flour slurry into it. Mix the corn flour slurry before pouring it as the corn flour settles down.
6. After adding the corn flour, keep stirring the milk for 5 minutes so that it gets slightly thicker.
7. Add 1/2 cup sugar into the milk and mix well. Keep stirring till the sugar dissolves and the milk gets thicker.
8. Stir for 6-7 minutes on medium flame. You will get the desired consistency as shown below in the photo.
9. After this, cook on high flame for 1 minute. Scrap the malai on the sides and add it to the mixture. Let it cool and once it gets cooled down, freeze it for 30 minutes.
10. Take 3/4 cup whipping cream in a separate mixing bowl. The cream should be chilled.
11. After whipping for 2 minutes, Add 2 tsp vanilla essence.
12. Whip for 5 more minutes until stiff peaks form.
13. Check the milk mixture. It has cooled down and you can see that it has got so smooth and creamy texture.
14. Add the mixture to the whipped cream.
15. Whip it for 5 more minutes. You can see the bubbles form on the sides.
16. Cover it with cling film/food wrap and Freeze it for 2 hours
17. After 2 hours, mix it and whip it again for 5 minutes. You can see how creamy it has become.
18. Pour the mixture into an airtight container. I kept the vanilla ice cream container I bought once, so I’m using the same. Freeze it overnight.
19. The next morning, you can see the nice texture of the ice cream.
20. Pour into a bowl.
21. Enjoy your delicious Homemade Vanilla Ice Cream. You can also pour chocolate syrup or garnish with chocolate chips.
