How to make Motichur Laddu Step-by-Step Photos
For making the moti
1. To make a perfect Motichur laddu, we will need water and besan to be in perfect measurement. Take 1 cup of gram flour(besan). Sieve it properly through a large strainer in a mixing bowl so that there are no larger particles or lumps left.
2. Now, take 1 cup of water and start adding water gradually to the pot. We need to make a batter. Do not add all the water at once. The consistency of the batter should be not too thin.
3. Use a hand whisker to mix the besan and water together to make a lump-free batter. After making the batter, I was left with 2 tbsp of water remaining.
4. Take a Piping bag. You can also use a milk packet if you do not have a piping bag. Fill it with the batter and close the open end with a rubber band.
5. Take a kadai and heat 2 cups of oil on medium to high flame.
6. Make a small cut at the end of the piping bag and squeeze from the other end of the bag to press the batter out in the kadai. The batter will come out in small droplets or “moti” as it is called in Hindi.
7. The droplets will fry and small “moti” will form. The moti looks so beautiful in golden color. Take them out on tissue paper to remove excess oil.
For making the syrup
8. Take 1 cup of sugar and 1 cup of water in a kadai. Turn on the flame and let it melt.
9. Once the sugar has almost melted, add 2 pinches of orange food color. Stir with a spoon to mix it well.
10. After the sugar has melted, add ½ tsp of keora water or rose water for a delicious taste and flavor.
11. When bubbles start forming, turn the flame to low and add the moti to the water. Stir and cook it well and let the boondi absorb the sugar syrup.
12. Once the Boondi has absorbed the sugar syrup, add 1 tbsp honey for binding. Mix it well.
13. Add 2 tbsp of melon seeds and mix well. Now cover it and keep it aside for 15 minutes.
14. Add 2 tbsp desi ghee to the mixture. Mix well.
For Preparing the Ladoo
15. Grease your hands with water. I’ll share two methods of making the Ladoos. In the first method, take a spoonful of the mixture in your hand and press the mixture together to bind it and give it a round shape.
16. In the second method, take a spoonful of mixture and use both your hands to press the mixture and bind it to give it a round shape.
17. Use any method you like to make the perfect round Motichoor Ladoo. Place the Ladoos on a plate.
18. Garnish with chopped pistachios and silver leaf. It is totally optional but it really enhances the look of the Motichoor Ladoo and makes them even more tempting.
The perfect Motichur Ke laddu is ready. Serve them to your friends and family at the next festival like Diwali, or to celebrate any occasion.
