This Mooli Ka Achar is an Indian Pickle Recipe that is made with Radishes. Radish is known as Mooli in hindi so it is known as Mooli ka Achar in India. This Indian pickle is very famous and used as an accompaniment to any meal that just enhances the taste and flavor of the meal. It is different than Pickled Radish as that uses Vinegar and is mainly a no-oil pickle recipe, while this one uses oil and other Indian spices. Another famous variant of this pickle uses Gajar and is known as Gajar Mooli Ka Achar. The process of making this instant Mooli Achar is very easy and just requires peeling the Radishes, drying them in sunlight, and mixing with spices and oil.

Ingredients for Mooli Ka Achar
- 1.5 kg Radishes
- 1/2 cup Panch Phoran – Panch Phoron mixture consists of the following five seeds: Fennel seeds (Saunf), Cumin seeds(Jeera), Fenugreek seeds(Methi), Nigella seeds(Kalonji), Ajwain seeds(carom seeds).
- 2 Dried Red Chillies
- Salt to taste
- 5 tbsp turmeric powder
- 3 tsp Kashmiri red chilli powder
- 1 tsp Homemade Garam Masala
- 1/2 cup Raw Mustard oil
How To Make Radish Pickle
1. To make a spicy and homemade Radish Pickle, we will take around 1.5 kg of radishes, wash them thoroughly to remove any dirt, then wipe them with a towel to dry them completely.

2. Cut the radishes into any preferred shape that you like. You can either cut them into long strips or round shapes. Now, place them on a cloth and let them dry slightly.

3. Do not over-dry them, as keeping the radish slightly moist ensures the correct and fresh texture for the pickle, and also maintains the necessary crunch. If we dry them too much, it would change their natural crunch and freshness. Once they get dry, take them in a plate.

4. Now, take a Kadai, add 1/2 cup of Panch Phoran, and 2 dried red chillies. Dry roast on a low heat and then let them cool.

5. Grind the mixture into a coarse powder. Do not make a fine powder. Keeping the spice mixture slightly textured is necessary for the Pickle’s taste and texture.

6. Now, take a large & deep bowl, combine the chopped and dried Radishes, spice mixture, salt to taste, 5 tbsp turmeric powder, 3 tsp Kashmiri Red chilli powder, 1 tsp homemade Garam masala, and 1/2 cup of Raw Mustard oil.

7. Mix everything thoroughly.

8. The Radish pickle is ready.

Serve with any meal, such as dal-rice, roti, and parathas. Enjoy!
