In this Homemade Tagar Recipe, which is also known as Boora or Bura Sugar, I’ll show an easy way to make Flavored Tagar, or Boora, which I normally use to make Besan Ladoo in place of normal powdered sugar. Using it to make the Ladoo gives it the texture and taste that it is famous for. Tagar or Boora is porous in texture and is made by melting sugar in water so that it loses its moisture, gets cleaned, and reaches the crystallization stage. It enhances the taste of any normal Mithai or Sweet.

Tagar Recipe Ingredients
- 1 cup of Sugar
- 3/4 cup of Water
- 1 tbsp Desi Ghee
- 4 crushed Green Cardamom
How To Make Tagar (Boora Sugar)
1. To make Tagar, we will take a Kadai or a Pan. Add 1 cup of Sugar.

2. Pour 3/4 cup of water into the Kadai. Stir and mix. We are making Bura Chini or Tagar from white sugar. It is usually made for Laddus and Pedas.

3. Let the sugar mixture cook and wait until bubbles appear all over the mixture, and it starts looking white.

4. Wait until the mixture turns white and bubbly. At this stage, we will add a tbsp of Desi Ghee. Desi ghee is added to prevent any lump formation.

5. Also, add 3-4 crushed green cardamom. Stir and mix well.

6. Turn off the flame and stir the mixture in a circular direction continuously without stopping.

7. As you keep stirring, you will see that the mixture will start thickening and turning white.

8. You can see below that the mixture has thickened as it cools down and turned white.

9. You can now mash the Tagar using a potato mixture. This will get rid of any lumps.

10. Our Tagar/ Boora Sugar is ready now. Let’s proceed to make the Besan Ladoo.

Ingredients

- Wait until the mixture turns white and bubbly. At this stage, we will add a tbsp of Desi Ghee.
- Also, as we are making flavored Boora Sugar, add 3-4 crushed green cardamom or else skip it if you are making plain Tagar. Stir and mix well.
- Turn off the flame and stir the mixture in a circular direction continuously without stopping.
- As you keep stirring, you will see that the mixture will start thickening and turning white.
- You can see below that the mixture has thickened as it cools down and turned white.
- You can now mash the Tagar using a potato mixture. This will get rid of any lumps.
- Our Tagar/ Boora Sugar is ready now. Make Ladoos and other Mithai from it.
