Veg Manchurian Dry Recipe

In this post, I’ll show the recipe for veg dry manchurian from Indo-Chinese cuisine. This Dry Cabbage Manchurian Recipe or Patta Veg Gobi Manchurian Recipe or Veg Manchurian Dry is a very popular Indian street food. This can be served as a starter or appetizer or as a side dish to Fried Rice. The outer layer is very crispy and the inner layer contains the filling that mainly contains veggies and spices. It is dipped in a spicy sauce which makes it so flavorful and tasty. The cabbage is finely grated and mixed with corn flour and maida. It is then fried and dipped in spicy sauce. Veg Manchurian Dry Recipe Ingredients

For Veg Manchurian Balls

  • 1 medium-sized chopped cabbage
  • 1 tsp salt
  • 1 grated carrot
  • 1 finely chopped capsicum
  • 1 tsp red chilli powder
  • 1/2 tsp black pepper powder
  • 2 tbsp grated ginger garlic
  • salt to taste
  • 7 tbsp cornflour
  • 3 tbsp all-purpose flour

For Manchurian Sauce

  • 4-5 tbsp oil
  • 2 tbsp finely chopped ginger
  • 2 tbsp finely chopped garlic
  • 3 chopped green chilli
  • 2 chopped onions
  • 1 chopped capsicum
  • 1 tsp salt
  • 1/2 tsp black pepper powder
  • 1/2 tsp red chilli powder
  • 1 tbsp soya sauce
  • 1 tbsp red chilli sauce
  • 1 tsp tomato ketchup
  • 1/2 cup water
  • 1 tbsp of cornflour with 3 tbsp water for corn flour slurry
  • chopped spring onion

How to make Veg Manchurian Dry Recipe (Step-by-Step Instructions)

For Crispy Manchurian Balls

1. Chop 1 medium-sized cabbage and add to a mixing bowl.

2. Add 1 tsp salt and mix well. Leave it aside for 15 minutes so that it leaves excess water.

3. After 15 minutes, squeeze out excess water by pressing between both hands and transfer the cabbage to a separate bowl. Remove the excess water.

4. Add 1 grated carrot and 1 finely chopped capsicum.

5. Next, add the following spices:
1 tsp red chilli powder
1/2 tsp black pepper powder
2 tbsp grated ginger garlic
salt to taste. Mix everything well.

6. Add 7 tbsp cornflour and 3 tbsp all-purpose-flour. Mix well to prepare a soft dough-like shape.

7. Grease your hands with oil and prepare Manchurian balls out of dough. When it starts sticking to your hands, just grease your hands with oil again.

8. In the same manner, prepare all the Manchurian balls and keep them on a separate plate.

9. Heat oil and once it is hot, add the manchurian balls one by one.

10. Once it is fried from one side, we will flip it to fry the other side too. Fry until golden brown on both sides.

11. Fry all the Manchurian balls in two to three batches in the same way and keep them aside for 15 minutes.

12. After 15 minutes, we will double-fry the Manchurian balls. Heat oil in the pan and add the fried manchurian balls. keep stirring or it will burn as the oil is hot. It will get fried immediately.

For Spicy Manchurian Sauce

13. Now, we will make spicy Manchurian sauce. Heat 4-5 tbsp oil on a high flame. Add 2 tbsp finely chopped ginger and 2 tbsp finely chopped garlic and 3 chopped green chilli. Saute on high flame.

14. Add either 2 small size chopped onions or 1 large size chopped onion. Saute it on high flame.

15. Add 1 chopped capsicum and saute on high flame for a minute.

16. Add 1 tsp salt, 1/2 tsp black pepper powder, and 1/2 tsp red chilli powder. Turn the flame to low and saute for a minute. Mix well.

17. Add 1 tbsp soya sauce, 1 tbsp red chilli sauce, and 1 tsp tomato ketchup. Mix well.

18. Cook on low flame for a minute. Add 1/2 cup water. Wait for 1 boil.

19. Now prepare a corn flour slurry by mixing 1 tbsp of cornflour with 3 tbsp water. After a boil, add the corn flour slurry.

20. Keep stirring and cook the sauce. Add chopped spring onion.

21. Once the gravy gets thick, turn off the flame, and then add the Manchurian Balls to the mixture. Mix them well.

  • Serve it hot with Fried Rice.
