Aam Papad or Mango Papad is a sweet and traditional Indian delicacy made with sweet & ripe Mangoes. This Aam Papad recipe is one of my favorite mango recipes. Since childhood, I used to purchase Aam Papad during the summer season. Recently, when my Husband disclosed that it is one of his favorite mango dishes too, I decided to make it at home.
Aam Papad is a sun-dried Mango dish that can be made with either Ripe and Sweet Mangoes or Raw Mangoes that give a sour taste. In this recipe of Mango Papad, I’ve tried it under the fan at room temperature to avoid dust. Making Aam Ka Papad requires only sweet Ripe Mangoes, sugar, and Ghee. It is easy to make, tastes so delicious and can be made with any Mangoes available in your area or even with the mango pulp available at stores.
To preserve the Sweet Ripe Mangoes during the summer season, we make various dishes out of them like for this recipe, they are changed into puree form, then cooked in a Kadai, Sun-dried, and finally cut into pieces and stored.

Aam Papad Ingredients
- 1.5 Kg Mangoes – Use Ripe and Sweet Mangoes such as Alphonso or Dasheri. You can also use store-bought Mango Pulp.
- Sugar – 2 Cup
- 1 tbsp Lemon Juice
- Desi Ghee as required
How To Make Aam Papad
1. To make Aam Papad, I took 1.5 kg of Mangoes.
2. Wash the Mangoes properly, cut them, and take out all the pulp in a large bowl.
3. Add all the pulp to a grinding jar.
4. Blend to a smooth, puree-like consistency.
5. Transfer it to the bowl. Mix well and keep it aside. You can also strain it to remove any large pieces.
6. Take the plate or tray on which you will spread the paste. Grease the plate with desi ghee.
7. Take a large Kadai. Pour the mango puree and 2 cups of sugar into the Kadai. Now, turn on the flame. Stir continuously and cook.
8. After cooking for 8 minutes, add 1 tbsp lemon juice. Stir continuously and keep cooking.
9. After 12 minutes, we will check it. It becomes sticky. Cook for 2-3 minutes more now.
10. After cooking for 3 more minutes, we have the perfect consistency to make Mango Papad.
11. Spread the mango puree on the plate or tray.
12. Now, we must let it dry at room temperature for a day. Keep it directly under a fan.
13. The puree has dried perfectly and turned translucent. Cut the edges carefully.
14. Take out the shiny Aam Papad carefully.
15. Now, you can cut it into any shape you like. To store it, wrap it with a food wrap, or else it will get dried.
Serve it immediately as a dessert or store to consume later as a sweet snack.

- Take out the shiny Aam Papad carefully.
- Cut it in any shape you like. Serve it immediately. To store it, just wrap with a food wrap or else it will get dried and not taste good.
