How to make Restaurant-Style Egg Chilli Dry (Step-by-Step)
1. Take the boiled eggs, slice them into four parts as shown below, and keep them aside.
2. Now, take a mixing bowl and mix 4 tbsp corn flour with 4 tbsp all-purpose flour. Add salt to taste, 1 tsp red chilli powder, and 1 tsp black pepper powder. You can adjust the spiciness of the dish by changing the level of red chilli powder as per your taste.
3. Add water gradually and mix it well to create a lump-free batter. The consistency of the batter should not be too thin or too thick.
4. After the batter is ready, add 1 egg white and mix it well.
5. Once the batter is ready, coat the egg slices with the all-purpose flour.
6. Next, dip the coated egg slices into the batter.
7. While we were doing the above process, heat oil in a kadhai/pan. Once the oil is heated, add the egg slices to the pan and we will deep fry the coated egg slices at medium to high flame until the color changes to golden brown(check the video). Beware of the splashes. When flipping, turn the flame to low to avoid splashes and move away from the pan.
8. Fry all the pieces and take them out on a separate plate.
9. Now, heat 4-5 tbsp oil in a separate kadai or pan, and after the oil is heated, add 1 chopped onion, 12-15 chopped garlic cloves, 1-inch chopped ginger, and 2 chopped green chilli. Saute on high flame.
10. Add 1 chopped capsicum, 1 onion petals, 1/2 tsp black pepper powder, 1 tsp red chilli powder, 1 tbsp soya sauce, 1 tbsp schezwan chutney, 1 tbsp tomato ketchup, 1 tbsp red chilli sauce and cook on low flame.
11. Add 1/4 cup water to the mixture which will make the gravy thin. Add the corn flour slurry to make the gravy thick. (To make the slurry, mix 1 tbsp corn flour with 4 tbsp water and mix well to create a lump-free mixture). Turn the flame to medium and cook the mixture for a minute. Stir often.
12. Add the fried eggs to the Kadai, and cook for 1 minute at high flame.
Serve the Dry Egg Chilli with Chapatis, and Naan.
