In this Golgappa Pani Recipe, I’ll share how to make spicy Pani and Masala for Pani Puri. I’ve already shared the recipe of Puri for Pani Puri or Golgappa which is made from Suji. Golgappa or Pani Puri is the most popular street snack in India. In this Pani Puri Water and Filling Recipe, I’ve shown how you can get the same flavor of spicy water and Filling that we get from the street stalls. The filling is made with spices and mashed potatoes while the savory and tangy flavored water is made with spices, mint, coriander, and Boondi.
I’ve shared the recipe for making the Puri for Pani Puri so that you can check if you want to make the Puri at home or else, you can also get it from any stall in the market.

Golgappa Pani Recipe Ingredients
For Pani/Water
- 4 green chilli
- ¼ cup coriander leaves
- 2 tbsp mint leaves
- ½ inch ginger
- 6-7 tbsp Tamarind Pulp
- 2 tbsp water
- 2 glasses of water
- 1 tbsp roasted cumin powder
- ½ tsp black pepper powder
- 1 tbsp red chilli powder
- 1 tsp Amchur powder
- salt to taste
- 1 tsp black salt
- 1 lemon juice
- 2-3 tbsp salted Boondi
For Masala/Filling
- 5 boiled potatoes
- 1 cup boiled white peas
- normal salt as per taste
- 1 tsp black salt
- 1 tsp roasted cumin powder
- 1 tsp red chilli powder
- 1 tsp coriander powder
- mint leaves
- coriander leaves
- green chilli chutney
- chopped onion
How To Make Spicy Golgappa Pani and Masala
1. Take a grinding jar to make the spicy Pani or water for Pani puri. Add 4 green chilli, ¼ cup coriander leaves, 2 tbsp mint leaves, and ½ inch ginger.
2. Add 6-7 tbsp Tamarind Pulp, and 2 tbsp water.
3. Grind to make a fine paste-like consistency.
4. Sieve it. The liquid will be collected in the bowl. Don’t throw the leftovers. Keep it aside in a bowl.
5. Add 2 glasses of water to the grinding jar, and sieve it to collect the liquid in the bowl.
6. Add spices to the bowl: 1 tbsp roasted cumin powder, ½ tsp black pepper powder, 1 tbsp red chilli powder, 1 tsp Amchur powder, salt to taste, 1 tsp black salt, and 1 lemon juice. Mix well.
7. Add 2-3 tbsp salted Boondi. The Spicy and tangy Pani for Pani Puri is ready now. Keep the water aside.
8. Let’s make the Masala now. Take a mixing bowl. Take 5 boiled potatoes and mash them.
9. Add 1 cup of boiled white peas. Soak it overnight and cook for 5 whistles. You can also use ¼ cup of Kala chana instead. Add normal salt as per taste, 1 tsp black salt, 1 tsp roasted cumin powder, 1 tsp red chilli powder, 1 tsp coriander powder, mint leaves, coriander leaves, and green chilli chutney that we kept aside after grinding to make spicy Pani earlier.
10. Mix everything well. The Filling for Pani Puri is almost ready.
11. Add chopped onion and mix it well. You can skip the onions if you don’t like them.
The Masala for Pani Puri is also ready now. Serve the spicy Pani and Masala with Pani Puri.

Instructions
- To make the spicy Pani or water for Pani puri, take a grinding jar. Add the following: 4 green chilli, ¼ cup coriander leaves, 2 tbsp mint leaves, and ½ inch ginger.
- Add 6-7 tbsp Tamarind Pulp, and 2 tbsp water.
- Grind to make a fine paste like consistency.
