Are Malai and Cream the Same?
No, People usually also call malai cream but there is a difference between the two. Malai is made from buffalo milk in India as it contains more fat, whereas cream is made from regular whole milk. Malai made from Indian Cow milk will be less thick but more healthy as it is superior with low fat and more nutrients.
To make Malai, we boil the milk and let it cool down, it also contains coagulated milk proteins, Whereas cream does not contain coagulated milk proteins as it is not heated or boiled. We simply wait for the cream to collect on the surface.
Fresh Malai from Milk Ingredients
- 1-liter full cream milk (Don’t use skimmed but full cream milk as you would not get thick malai from it)
How to make thick Malai from Milk (Step by Step Instructions)
1. Pour 1 liter of full cream milk into a heavy bottom pan or pot.
2. Heat milk on a high flame and wait until it comes to a boil.
3. After it comes to a boil, let it simmer for a total of 5 minutes. First, use a spatula and continuously take out and pour some milk for 1 minute. This will create a thick foam-like texture. After 1 minute. Let it cook for 4 minutes.
4. Turn off the flame. Let the milk cool for 3-4 hours at room temperature and then refrigerate it overnight.
5. You will find a layer of thick malai formed on the top in the morning.
6. Use a knife to scratch the sides.
7. Skim off the layer using a spatula. You can see that Malai formed on top of the milk is so thick using this method.

- After a boil, let it simmer for 5 minutes.
