This recipe for Kesar Pista Kulfi shows the popular and traditional Indian Ice cream dessert recipe that is different from normal Ice cream as it is more creamy and rich and not made by whipping cream, and also it has a nutty flavor due to added nuts and flavoring agents like saffron and cardamom. There are so many variants of Kulfi like Rose Kulfi, Mango Kulfi, and Malai Kulfi. Today, I’ll share an amazing and royal Kesar Pista Malai Kulfi Recipe that is one of the best and one of my personal favorites.
What is Kesar Pista Kulfi
Kesar Pista Kulfi is a perfect kulfi Ice cream that is made with milk, Mawa, sugar, and chopped nuts while Saffron and Cardamom are used to add flavor. Kulfi goes back hundreds of years and is normally made with traditional condensed milk where the milk is evaporated to make thick Rabri to give it a creamy texture and frozen for hours. It is normally served as a dessert to guests or made during festivals such as Holi and Diwali.

Kesar Pista Kulfi Recipe Ingredients
- 600 ml milk
- 1 tsp saffron
- 1 tsp cardamom powder
- 2 tbsp chopped cashew
- 2 tbsp chopped pistachios
- 2 tbsp chopped almonds
- 1/2 cup sugar
- 1 cup Mawa/Khoya
- Chopped dry fruits for garnishing
How to make Kesar Pista Kulfi (Step-by-Step Instructions)
1. Boil 600 ml milk in a heavy bottom Kadhai/pan to condense it. You can use any type of milk – full cream or toned milk. I use full cream as it gives a better taste to any ice cream.
2. Once a boil comes, mix it well with a spatula and let the milk simmer. Keep in mind that the flame should not be high. Cook it on medium flame or else the milk will spill.
3. Add 1 tsp saffron and 1 tsp cardamom powder. It gives a rich flavor to the Kulfi Ice cream.
4. Cook for 6-7 minutes on low to medium flame. Keep stirring continuously and we have to cook until the milk thickens. Do not leave it unstirred or else the milk will burn from below. Also, scrap the malai formed on the sides and add it to the mixture. It gives a great taste and texture to the dish.
5. After cooking for 7 minutes, the milk has slightly thickened and reduced in quantity, now add 2 tbsp chopped cashew, 2 tbsp chopped pistachios, and 2 tbsp chopped almonds. Mix well.
6. After adding the dry fruits, Cook again for 6-7 minutes on low to medium flame. Keep stirring continuously and let the milk thicken.
7. After 6-7 minutes, you can see that the milk has thickened and reduced to less than half the quantity. Now, add 1/2 cup sugar. Mix well and Cook for 4-5 minutes on low to medium flame. Keep stirring.
8. After 4-5 minutes of cooking, add 1 cup Mawa/Khoya and let it mix well with the milk. I have made it at home and I’ve already shared the recipe for homemade Mawa. It makes the dish more delicious and creamy.
9. Now, the milk has thickened and the Rabri-like consistency is ready. Turn off the flame. Let it cool at room temperature.
10. After 1 hour, the base for Kesar Pista Kulfi ice cream is ready. Now, we will set it in the Kulfi molds.
11. Pour the base into the molds, seal them, insert the ice cream sticks, and freeze overnight.
12. After freezing overnight, the Kesar Pista Kulfi ice cream is ready.
13. To take it out from the mold, you can dip it in normal water for 2 seconds.
14. Rub it between your hands.
15. It will come out quickly.
16. The delicious Kesar pista Kulfi is ready. Garnish with chopped dry fruits. Enjoy.

- Pour the base into the molds and freeze overnight.
